THE shrimp burger they are a great alternative to classic meat burgers. Easy to prepare, they can be a way to entice even those who do not love fish too much to try their hand at this type of dish. Method

How to make shrimp burgers

First boil the potatoes: wash them under running water, then put them in a pot full of cold water, bring to a boil and cook for about 35 minutes or until the potatoes are cooked, then peel and mash.

Chop the prawn tails with a knife, not too finely, then mix them with the mashed potatoes, yogurt, chopped parsley and salt.
Mix well and, if the mixture is too soft, add a little breadcrumbs to obtain a slightly more compact consistency: the dough must be soft but workable.

Compose your burgers directly in a non-stick pan greased with a little oil, with the help of a pastry ring, then cook a few minutes on each side, until golden brown.

The shrimp burgers are ready to serve.

For the New Year's Eve dinner, we thought of organizing a "pub-style" burger and fries dinner, but could they have been simple sandwiches? We baked some soft and fluffy squid ink buns and filled them with a shrimp burger, caramelized onion, zucchini alla scapece and pink sauce, then opted for sweet potato chips. Beer? A blonde Chouffe, a Belgian Ale with an alcohol content of 8%. Ingredients for 4 shrimp burgers

400 g. of clean prawns
2 medium potatoes
the white of an egg
1 tablespoon of breadcrumbs
the grated zest of 1/2 lemon
Salt and pepper
Extra virgin olive oil.
For the breading: egg white, breadcrumbs, sweet paprika and sesame seeds

1. Boil the potatoes with all the peel, once they are soft, drain them and when they are still hot, remove the peel and mash them.

2. Take the shrimp and remove the internal intestine. Clean them under running water, removing any impurities and dry them. Chop the shrimp pulp which you will then collect in a bowl together with the mashed potatoes, egg white, grated lemon zest and breadcrumbs, add salt and pepper and add two tablespoons of oil. Mix everything well and divide the mixture into 4 parts. If it is too soft, add more breadcrumbs, on the contrary, more egg white.

3. With slightly moist hands, form meatballs and pass them first in the egg white and then in the breadcrumbs to which you have added the paprika and sesame seeds. Take a baking tray and cover it with a sheet of parchment paper and with the help of a pastry bowl form your burgers by pressing well with the help of a spoon.

4. Put the burgers to rest in the fridge for at least an hour. After the necessary time has elapsed, take the burgers from the fridge and cook in a preheated oven at 175 ° for about 20 minutes.


Red prawn burger with wasabi and mustard mayonnaise

I love the red prawns, as soon as I can I take them to my kitchen and I enjoy preparing them. I love them raw because in my opinion they give the best of them in terms of taste, scent of the sea and texture. but yet many people cannot eat them raw. Some time ago, after posting Apple & ampShrimp, a recipe that included them in a salad with apples and celery, I have received many messages asking me recipes that provided them cooked. It is certainly not a mistake to cook them, the important thing is to do it with delicacy, for short time and protecting them from excesses of heat and flavor of the other ingredients.

I wondered what the recipe could be the most tasty and creative to be proposed here on the blog and I came up with a recipe from the chef Giancarlo Perbellini: a burger (his was scampi) rather simple and quick to prepare. So I decided to decline the recipe using the red shrimp and the orange and to accompany the burger with a mayonnaise rather aromatic and pungent based on wasabi and mustard.

Ingredients for two burgers:

300 gr. of red prawns (or purple prawns, gobbetti or scampi, they are also good for II ^ or III ^ size)

2 slices of bread for sandwiches

2 tablespoons of flour type 00

Orange zest (lightly grated)

Ingredients for wasabi and mustard mayonnaise

150 ml of seed oil (sunflower or peanut)

1 tablespoon of vinegar (or lemon juice)

Preparation procedure

Clean the prawns, removing the head and carapace and taking care to remove the internal casing (see video at minute 1 & # x2715 & quot). You can recover the heads and shells to make funds for other recipes, it's a shame to throw them away!

Coarsely chop in shrimp a chunks of about half a centimeter and season them with salt, pepper, extra virgin olive oil and a light grating of orange zest (if you want, you can replace with lime or lemon). Don't add juice!

Obtain 4 of the bread discs for sandwiches with a 6-7 cm pastry cutter

Always using the pastry cutter, compose the burger, placing a disc on the bottom, then a generous spoonful of shrimp (half the amount you will have available), settle and level the pulp well, then cover with the other disc of bread and remove the burger from the pastry ring. Then compose the second burger in the same way

Let the burgers rest in the refrigerator for about 20 minutes

Prepare the mayonnaise by putting it in a mug one yolk, one tablespoon of vinegar (or lemon juice), salt, pepper, wasabi and mustard. With a hand blender emulsify the oil which will be paid a little at a time. Stop when the desired consistency is reached. Taste and adjust if necessary with vinegar, salt and spices.

At this point it will be possible to wet the burgers with a little lightly salted beaten egg (see video at minute 6 & # x2735 & quot)

Immediately after passing a veil of flour on burgers (little, eliminate excess)

In a hot pan, melt the butter with a little oil over medium heat and brown the burgers 3 minutes per side, turning them from time to time and, if possible, keeping them in the coldest part of the pan, pouring the hot butter on the surface (see video at minute 8 & # x2721 & quot)
