Spinach with tomato sauce and poached egg

And a finger :) BBk was shooting at me, from all sides, it ruined my pictures and my perfect egg!

  • 500 gr spinach (cleaned)
  • 10 tomatoes
  • a big carrot
  • a red bell pepper
  • a green bell pepper
  • 2 dried onions
  • 2 sprigs of green onion
  • a spoonful of tomato paste
  • salt to taste
  • an egg + 2-3 tablespoons of vinegar (for one serving)

RECIPE PREPARATION Spinach with tomato sauce and poached egg:

Chop the vegetables and heat them in 2 tablespoons of oil. Add the spinach (whole or chopped), cover the bowl with a lid and leave it on the right heat for 10 minutes, until the spinach penetrates. We pass the tomatoes through a grater and add them over the spinach together with the tomato paste. Match the taste with salt and cook for another 10 minutes until the sauce decreases. Meanwhile, prepare the poached egg that will be served with spinach. (In a bowl as narrow as possible, bring the water to a boil, add the vinegar and heat the water to boiling, without boiling it; break the egg into a small bowl and add it to the water; let it boil for 3 -4 minutes, holding it tightly with two tablespoons, then carefully remove it on a paper napkin to absorb excess water).
