Dough:

Divide the dough into 3 equal parts.

Wallpaper a 24/36 cm tray with baking paper, place the first sheet. If the edges are too large, cut them.

We put half of the cheese, the second sheet, the rest of the cheese and the sheet again.


Put the cake in the hot oven, at a suitable temperature, for 45-50 minutes.

It is good to know that this cake can be made with any kind of cheese or cream cheese. We can successfully use cottage cheese, ricotta. It is true that mascarpone cheese gives it a different flavor and a finer, more gala texture, but it is just as delicious using any kind of cheese.

The first thing we do is heat the oven to 180 degrees, then prepare the worktop.

Very simple: put 280 grams of flour and the rest of the ingredients for the counter in a bowl and mix them.

We mix them well and we will get an easy to shape dough. From the dough thus obtained we take 3/4 and line the bottom and a little of the walls of a cake tray with a diameter of 26 cm.

We let the rest of the dough rest until we need it.

After we finished with the top, we quickly started to prepare the cheesecake filling. It's not a great philosophy, the ingredients are put all together (except for the chocolate) without respecting a certain order and mix well with the mixer. Mascarpone cheese should not remain lumpy.

We break the chocolate into pieces and melt it in the microwave or on a steam bath. When it is melted, add it over the filling and mix until it is homogeneous

& # 8230 and add everything in the cake pan over the counter.

Over the remaining dough add 50 g of flour and mix. We will get some dough crumbs that we sprinkle over the filling and ready. Bake the pan for 80 minutes at 180 degrees.

After 80 minutes, remove the tray from the oven and remove the ring to cool faster. Powder with cocoa and powdered sugar. Isn't that good?

Cake with sweet and gray cheese

It's more of a pudding. You can still cut slices and eat by hand. Whoever wants, can make a tender dough, tart, underneath. I have done it many times, but as I present it to you, without any other dough.

I used a 35 * 20cm tray, but you can also use a slightly larger tray, in which case the cake will come out a little narrower.

We need the following ingredients:

  • 1 liter of milk
  • 130g gray
  • 100g caster sugar (or to taste)
  • 150g butter at room temperature
  • 500g sweet cheese
  • 4 eggs
  • 2 teaspoons vanilla extract
  • grated peel of a lemon
  • 60-100g raisins (optional)

How I did:

I heated the oven to medium heat (180ºC) and I greased it with butter and I floured an enameled tray of 35 * 20cm.

In a larger bowl, I mixed the sweet cheese with the sugar, soft butter, vanilla, lemon peel and egg yolks. I then added the semolina with cold milk and the raisins. At the end I added the beaten egg whites separately.

I poured the composition in the prepared tray and baked for an hour at 180ºC, until the cake browned a little on top.

I let it cool very well, including in the fridge, before cutting it into slices.

200 gr sour / fermented sour cream (25% fat)
120 gr sugar
1 sachet of vanilla
grated peel of 1/2 lemon
1 pinch of salt
80 gr starch
4 eggs

Preparation Cake with cheese and sour cream

  1. In a bowl, rub well, with the mixer, the cream cheese, in order to crumble the cheese as well as possible.
  2. In another bowl, rub the yolks with the sugar and vanilla sugar with the mixer for about 3-4 minutes, until you have a thick pale yellow cream. Add the starch and rub only until smooth.
  3. Add the above cream and lemon peel over the cheese and mix gently with the whisk.
  4. In another bowl, beat the egg whites with salt until you get a foam that stays on the phone. Add the foam in 3 tranches over the cheese mixture, stirring gently with the tele after each. At the last tranche, mix lightly until you see only fine foam on the dough.
  5. Pour the dough from a low height into a 23 cm round tray, preferably with removable walls (lined on the bottom with baking sheet and greased well on the edges and bottom with oil or butter).
  6. Bake the cake for 180C (if the oven is electric, use only the bottom heat) for 30 minutes.
  7. Pass with the knife on the edge to open the cake from the walls of the tray. Remove the tray walls. The cake is transferred by overturning on a plate. If the baking paper is stuck to the bottom and does not fall apart easily, wet your palms and rub the paper everywhere, wait 1 minute, then try to unroll it again, it will come down slightly. It is better after it cools completely. It can be served with a fruit coulis (strawberries, raspberries).

My mother is the god of honey leaves. For me, of course. And for the honey sheets he makes. I could eat this cake & # 8230pff, a lot. Start working in a large bowl in which you first beat the eggs with the sugar, honey and lard. Keep the bowl on the steam bath while you do this, it is better if the mixture is hot. Add the milk to the mixture. Put the flour, salt and baking powder in a sieve and sift them directly into the bowl, after the mixture has cooled slightly.

Knead the dough for 3-4 minutes, no more that it becomes too elastic and you don't want that. The important thing is not to be too soft, non-moldable. Divide the dough into four parts from which you spread sheets that you prick with a fork, so that they do not swell when baked. Bake in the preheated oven at 180 degrees Celsius, on the back of the tray, on which you spread a baking sheet. Three or four minutes is enough for a sheet. Allow the sheets to cool before filling.

Cream: my mother used to make semolina cream. One day he tried vanilla cream and liked it better. Since then he makes the cream with vanilla pudding and butter. The cream is made as here (the quantities match). If you don't have vanilla pods, use vanilla bourbon sugar. After the vanilla cream has cooled, mix it with the butter (200g) left for an hour at room temperature (21 C), to be soft and easy to process. Grease the sheets one by one with a sour jam (rosehips, horns, even magiun) then with the previously prepared cream. The last sheet can be glazed with chocolate or just sprinkled with chocolate.


Santa's buttons

  • 1 cup and a half of freshly sifted flour
  • half a cup of brown sugar
  • 1/2 packet butter
  • a pinch of salt
  • 2 yolks
  • 1/2 sachet baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger powder

We mix in a clean bowl the flour with the sugar with the baking powder, the cinnamon and the powdered ginger. Over all we add half melted butter. Mix everything until you get a crumbly mass. then we put the two yolks and mix continuously, by hand, until we get a dough like a plasticine (if you need a little flour, depending on the type of flour you use it may be a little needed, even if faina & quot00 & quot). Then let the dough breathe for about half an hour, in the cold, just like that! Christmas is coming.
Then remove the dough from the cold and knead it a little more to regain its elasticity. Then spread the dough on the floured table with the rolling pin.
So, after you slowly stretch, start cutting the button. To do this, use two round shapes, one larger and one smaller than the first for an inner contour. This is to give the shape of a button. With the help of a straw, they form four holes, which only need to be sewn to Santa's clothes.
Then put them in a tray lined with baking paper and put on medium heat, in the preheated oven, for 15 minutes, maximum 20 depending on the oven. And the whole house full of flavors. just like Christmas, just like no snow. but with aromatic cinnamon, fragrant ginger.

In the remaining half of the composition, add cocoa and mix well until smooth. If necessary, if it thickens too much, add a tablespoon of milk.

In the meantime, get ready cheese cream, mixing all the ingredients well.
