I made this with what I had in the cupboard at the last minute; was going to make chilli, then thought I'd make a curry. Turned out great, if I say so myself!

  • 1 tablespoon vegetable oil
  • 2 medium onions, finely diced
  • 3 garlic cloves, minced
  • 2 1/2 to 3 tablespoons hot madras curry powder
  • 500g beef mince
  • 450g diced potato
  • 1 tablespoon dried chilli flakes with seeds
  • 1 (400g) tin chopped tomatoes
  • 300ml beef stock
  • 1 tablespoon tomato puree
  • sea salt and freshly ground black pepper, to taste
  • 1 handful freshly torn coriander leaves

  1. Heat a large heavy based pan with vegetable oil over low to medium heat. Add the onions and garlic and cook and stir until translucent. Mix the curry powder with a little water to form a paste then add to the onion and fry gently, stirring constantly so it doesn't burn.
  2. Add beef and potatoes and cook and stir to break up the mince and coat it all in the curry paste. Add chilli, tomatoes, stock and tomato purée, bring to a simmer, season with salt and pepper. Stir well, cover and cook for 15 minutes.
  3. After 15 minutes, stir well to prevent burning, then cover and continue to simmer for another 15 minutes until potatoes are soft. Once the potatoes are tender remove from the heat and serve garnished with coriander with naan bread and boiled rice.

Tip

Good quality minced beef will have less fat content. However, cheaper mince can be used but you may want to fry the mince separately and drain it before adding with the potatoes at step 3. Let me know if you have a problem at [email protected]

Recipe Summary

  • 1 1/2 pounds lean ground sirloin
  • 1 large onion, finely chopped

  • 1 large Yukon Gold potato, peeled and cut into 1/2-inch dice
  • 1 1/2 cups low-sodium chicken broth
  • One 14-ounce can unsweetened coconut milk
  • One 14-ounce can diced tomatoes with their juices
  • 1 1/2 cups frozen baby peas
  • Chopped cilantro, warm naan and steamed rice, for serving

In a large, deep skillet, heat the oil. Add the ground meat and cook over high heat, stirring to break up the lumps, until no longer pink, about 5 minutes. Add the onion, ginger, garlic and curry powder and season with salt and pepper. Cook over high heat, stirring frequently, until the onion is softened, about 3 minutes. Add the potato, broth, coconut milk and the tomatoes and their juices and bring to a boil. Cook over moderate heat, stirring occasionally, until the potato is tender, about 15 minutes.

Using the back of a spoon, lightly crush some of the potato. Add the peas and cook just until heated through. Serve in bowls with cilantro, naan and rice.


Keema Aloo/Minced Meat and Potato Curry

Delicious keema aloo (mince n potato curry) with some chopped red and green capsicum for added flavour. Tastes delish and smells sensational too!

Ingredients

  • 250gm beef mince (or you can use half beef and half lamb mixture) -Marinate the beef in quarter tsp. each of turmeric, coriander, cumin powders, some salt, and 2 tbsp. of yoghurt. Set aside for at least half an hour.
  • 3 grated onions
  • 2-3 tbsp. oil
  • 2-3 fenugreek/methi leaves
  • 3 tomatoes, blended with skin
  • 2 tbsp. tomato puree/paste
  • 1-2 green chillies
  • 2 potatoes, peeled and cubed
  • 1 small green capsicum, cubed
  • 1 small red capsicum, cubed
  • some whole pepper, 2 cloves, 2 cardamom pods
  • 1 tsp. ginger
  • 1 tsp. garlic
  • 1/4 cup yoghurt, whipped
  • salt to taste
  • 1 tsp. coriander powder
  • 1 tsp. cumin powder
  • 1/2 tsp. garam masala
  • 1/2 tsp. turmeric powder
  • 1/2 tsp. red chilli powder
  • juice of half a lemon
  • 2-3 tbsp. chopped coriander

Instructions

Heat the oil in a pan, add the fenugreek/methi leaves. Then add the whole pepper, cloves and cardamom pods. Let them fry for a few seconds, then add the grated onions. Fry them until golden brown, now add the garlic and ginger pastes, followed by the cubed capsicum and potatoes. Fry these together for a couple of minutes, then add the tomato paste and the turmeric, coriander & cumin powders. Once these have cooked together slightly, add the mincemeat, and sort of fry it into the mixture for 2-3 minutes until the color changes slightly.

Add the blended tomatoes and a bit of chopped coriander. Cover and simmer together until the tomatoes are cooked and getting dry, and the oil begins to separate from the sides. Add the yoghurt and red chilli powder plus the green chilies. Cook for a few minutes on low heat making sure the yoghurt is well blended into the mince, and adjusting salt/chilli to your liking. If you prefer a vivid color in your curry, you can add a bit of fried crushed onions or extra tomato paste. Check the potatoes to make sure they are done. If you prefer extra gravy like we do, then add some warm water and boil for a few minutes. If you like your curry on the dry side, then do not add any extra water, let it dry up to your liking. Once done, sprinkle garam masala and chopped coriander over the top and squeeze the lemon.

Give it a quick mix and you’re done! Serve with rotis, chapatis or rice, or as preferred!


Method

  1. Heat a large nonstick frying pan over a high heat. Add half the mince and stir-fry for 3-4 mins until browned. Tip into a colander placed over a bowl to drain. Repeat with the remaining mince.
  2. Return the strained meat juices to the pan and reduce the heat to low-medium. Add the onion, garlic and ginger and cook for 6-8 mins until softened. Stir in the coriander stalks and tikka powder and cook for 2-3 mins, stirring, until fragrant.
  3. Return the browned mince to the pan and add the tomatoes and stock season. Bring to the boil, then simmer, uncovered, for 20 mins, stirring occasionally. Meanwhile, cook the rice to
    pack instructions.
  4. After 20 mins, stir in 1 tbsp of yogurt, the drained peas and half the coriander leaves. Cook for 2 mins, then taste and season if needed. Scatter with the remaining coriander, then serve with the rice and a spoonful of yogurt.

Sri Lankan Spicy Beef and Potato keema curry.

6 tablespoons of cooking oil

1 tablespoon of ginger-garlic paste(make your own paste)

500g of Beef cooked and then shredded(see notes above on how to shred the beef).

3 medium-sized Potatoes, peeled and cubed to 1/2 an inch

Shred the beef first, use the methods given above on how to shred the beef. choose the method convenient for you.

Season with salt, turmeric, curry powder, chilli powder, sugar combine and set aside for 20 minutes.

Wash, peel and cube the potatoes(1/2 an inch). set aside.

Place a shallow, flat pan on medium heat and pour in the oil.

Add the Onions, curry leaves and let it cook until the Onions become translucent.

Once the Onions become pale, add the Beef to the pan.

Over medium heat, start mixing the Onions and the spices with the Beef while letting the meat fry, this should take about 5-10 minutes.

Once the beef chunks are slightly brown, gradually add the cubed Potatoes, remember both the Beef and potatoes should semi-fry and cook quickly so the size you slice the meat and cube the potatoes matters.

Now add the water with the chilli flecks and leave it on medium heat to cook for 5 minutes.

Cook until water is completely reduced, add the Coconut milk with Salt to season and cook until its reduced and a thick gravy forms.

How to serve.

You have two options if you want a bit of gravy and you are hoping to serve 3 to 4 individuals, leave the thick gravy but if it is only for two, serve it as a dry keema curry without the gravy. You can do this by letting the curry cook until the gravy coats the beef and Potatoes .

Taste and season with salt and serve hot with your favorite Roti or Naan bread.

1. Heat the oil in a medium non-stick saucepan with a lid. Fry the onions on a medium to high heat until golden brown. This will take approximately 10 minutes.

2. Lower the heat and add the garlic, ginger and green chilli paste. Stir for 2 minutes.

3. Add the coriander, cumin and turmeric powder and salt and stir for a further 2 minutes.

4. Add the minced beef and cook over a medium heat for 10 minutes until the mince has browned.

5. Add the water, cover and cook over a low heat for 20 minutes. Use less water if you prefer less sauce.

6. Stir well and add the potatoes, tomato puree and lemon juice. Cover and cook for a further 20 minutes or until the potatoes are tender and cooked through.


The Origins of this Pakistani Kima

This Pakistani Kima recipe is adapted from one by the same name in the great "back to basics" cookbook, More-With-Less. I actually didn't get this recipe initially from the cookbook, but from our dear friend, Margaret, who also is the source of my Applesauce Wheat Germ Muffins (w/ GF option).

Margaret, like all of us, is busy. But unlike me, she does not like to cook.

One pan meals are her specialty (now, I love to cook, but when simple and wonderful go together, I am all ears!) and she shared this one with us at her home years ago. We loved it and have made it regularly ever since.

Years later, I took out More with Less from the library and saw this recipe and thought, "That's it! That's the same Kima ("kee-ma") we love!"

I've made a few changes (of course :-)) and it tastes even better (in my humble opinion).

We almost always serve this with:

  • Rice (I prefer brown organic. Mine cooks in 19 minutes in my pressure cooker - Yippee!)
  • Cauliflower Rice (now that I am eating more low carb and AIP) sprinkled on top
  • more Moroccan Vinaigrette on top as well

Preparation

  • Total Time 50 minutes
  • Preparation Time 5 minutes
  • Cooking Time 45 minutes
  • 500g beef or lamb mince
  • 1 onion (small), diced
  • 1.5 tbsp curry powder
  • 200ml boiling water + Knorr Zero Salt beef stock cube dissolved
  • 400g potatoes (peeled), diced
  • 400g chopped tomatoes (one tin)
  • 150g peas (frozen)
  • 2 tbsp vegetable oil
  1. In a large non stick pan, fry the onion for about 5 minutes, until soft (don't let it brown!)
  2. Add the mince and brown
  3. Add the curry powder and potatoes and fry for 1 more minute
  4. Pour in the stock and tomatoes, season - cover and simmer for 25 minutes (or until potatoes are cooked)
  5. Finally, mix in the peas and cook for a further 5 minutes
  6. Serve with rice and a dollop of greek yoghurt (with chilli flakes on top for adults)

Making Palak Aloo Keema.

You can always control the amount of heat by adding minced or chopped green chili, or just increase the amount of red chili used in this recipe. It is advised to serve yogurt with Indian dishes, it helps in reducing any uncomfortable feeling you may experience after having a spicy meal.

When making my Palak Aloo Keema, please do not reduce the amount of oil mentioned in the ingredients, you will get stronger and better tasting Palak Aloo Keema if you let the mixture get fried in oil properly.
