In a large bowl put 50 g of flour then add the scalded milk and mix well so that the composition does not remain lumpy.
Mix the fresh yeast with 2 teaspoons of sugar until liquefied.
Add it over the scalded dough (slightly cooled) and mix well. Leave it in a warm place for 15 minutes.
Separately mix the yolks with salt, sugar, vanilla sugar, milk and 50 ml butter.
Add the liquid mixture over the scalded dough, then gradually add the flour and knead the dough well. At the end add the rest of the melted butter and knead lightly when it is slightly incorporated into the dough.
Let the dough rise for 60 minutes or until it doubles in volume.
For the filling of walnut, boil the milk with the sugar and vanilla sugar until the sugar melts.
Mix the lemon peel with the walnuts then add the hot milk and mix well.
Divide the dough into 2.
We spread each piece in a thin sheet of about 0.4 cm and as long as the tray.
On the first sheet we put the shit and on the second the walnut composition.
We roll each side tightly then weave them.
Put the cake in a tray lined with baking paper and leave it to rise for another 30 minutes, then bake it on low heat in the preheated oven for about 1 hour.
