They are the little bones or saint's bones and, although its origin is uncertain, they have been part of the gastronomic and cultural heritage of our country for centuries.

Although like panellets can be found in any pastry shop, making them at home is simple and fun, so this year of confinement can be an entertainment option for the whole family with the happiness of being able to enjoy them when finished.

Nutritional properties of almonds

Apart from sugar, the main ingredient in saint's bones is almonds, a food that, according to the Spanish Nutrition Foundation "It has a high fat content - especially monounsaturated -, a source of vegetable protein, and to a lesser extent, it provides carbohydrates. How to make homemade saint bones

Of course, they are not exactly light, because their high sugar content makes them a food that we should not abuse.

Ingredients

For marzipan

  • Ground almond, 250 g
  • Sugar, 250 g
  • Water, 100 ml

Heat the water in a saucepan next to the sugar and heat stirring occasionally until it boils and the sugar is completely dissolved. Let it boil for a couple of minutes until a light syrup forms but without letting the sugar take on color.

Step 2

Sift the almond flour over a bowl that resists heat and gradually add the syrup that we will integrate with a spatula until a dough is formed that is not too moist. Depending on how dry the almond flour is, we will need more or less syrup, so nothing happens if we have a little left over.

Step 3

When the dough is manageable it is time to add the lemon zest, kneading well until fully integrated.

Step 4

We form a ball with the dough and let it rest for two or three hours so that it hardens a little.

Step 5

Divide the dough into three or four portions and sprinkle the top with sugar glacier. We take a portion of dough and stretch it until it is a couple of millimeters thick. Then we cut the sheet of dough into strips six inches wide. We can leave the dough smooth or make the typical ribs with the help of a skewer stick.

Step 6

We cut the strips of dough into pieces of six centimeters to form squares which we will shape into a canutillo with a tubular mold. We press the edges well so that they do not open, we take them out of the mold and let them dry for a few hours (it can be overnight).

Step 7

To prepare the yolk cream filling, we separate these from the egg whites, beat them and reserve them in a large temperature-resistant bowl.

Step 8

Again, in a saucepan heat the water with the sugar for about five minutes until the sugar dissolves and a syrup forms. Remove from the heat and add it in the form of a thread on the beaten egg yolks while beating non-stop with the help of manual rods. Put the bowl with the yolk mixture in the water bath and cook for about 25-30 minutes until the cream thickens. When it cools, it will thicken more, but in no case should it be liquid, as we need it to be a thick cream to be able to fill our saint's bones.

Step 9

When the cream is very cold, we put it in a pastry sleeve and fill the marzipan canutillos that we have reserved.

Step 10

Finally we prepare a simple icing by mixing 200 g of icing sugar with about 50 ml of water that we will add little by little because we need a thick paste, but manageable to coat our little bones.

Step 11

After passing them through the icing, we leave them on a wire rack until the icing dries and we can manipulate them without sticking to our hands.
