350 g wide rice noodles
200 g cooked chicken, cut into thin strips
50 g cashew nuts
4 chopped green onions
1/2 bunch of fresh, chopped coriander
2 cloves garlic, finely chopped
2 tablespoons peanut butter
2 tablespoons sweet pepper sauce
1 tablespoon soy sauce
1 tablespoon rice vinegar
1 tablespoon brown sesame oil
2 tablespoons peanut oil
2 tablespoons water
15 Sichuan peppercorns, fried and ground
1/2 red hot pepper, chopped
fresh coriander leaves for serving
Soak the noodles for 5 minutes in hot water, then drain and rinse under running cold water. They are leaking again.
While the noodles are cooking, mix the green onions with coriander, hot peppers and garlic in a bowl. In another large bowl, mix peanut butter with sweet hot pepper sauce, soy sauce, rice vinegar, sesame oil, peanut oil, water and Sichuan pepper. Add the green onion mixture to this bowl and mix.
Then add in the bowl the noodles, chicken and cashews. Mix well and serve immediately, garnished with coriander leaves.
If you do not have access (see Note below) to some all the ingredients, for some you can use substitutes. However, they will affect to some extent the taste and aroma of the recipe.
Below is a short list of possible replacements:
Rice vinegar can be replaced with a good quality white wine vinegar.
Cashew nuts can be replaced with hazelnuts.
Brown sesame oil can be replaced with cold pressed walnut oil.
Peanut oil can be replaced with sunflower oil.
To decorate the recipe, coriander leaves can be replaced with parsley leaves.
Sichuan pepper and rice vinegar can be found in specialty stores, such as Bacania Veche, Ki-Life, and grocery stores in Red Dragon.
Brown sesame oil, peanut butter, peanut oil and soy sauce can be found in hypermarkets.

In addition to the right vegetables for chicken noodles, you also need a few Asian ingredients. Soy sauce, fish sauce and sweet chilli sauce are indispensable. From my point of view, sesame oil is also very important, but if you can't find it, you can omit it. For noodles with chicken and vegetables we obviously need more Chinese noodles. I used egg noodles, but you can also use rice noodles, wider. You can use any kind of Chinese noodles you want, both fresh and dried. However, do not boil them too much so that they do not fall apart. In addition to Bonduelle vegetables, you can put any other vegetables you want. I used broccoli and mushrooms, but you can put anything else you like.
Taste the chicken noodles after you put the sauces and add more if necessary. Depending on the soy sauce, more may be needed. However, put little by little. Soy sauce is very salty so you can spoil your food with too much soy sauce. It would be best to put it at the end, after you have added the noodles. For extra freshness I added a little green onion that perfectly complements this recipe for noodles with chicken. When serving, you can also add a little sesame for appearance, but also for taste. Cut the chicken breast into thin strips. Salt and pepper it, then pour 1-2 tablespoons of soy sauce over it and roll it well to cover on all sides. Put it aside.

Boil the noodles as directed on the package. Drain and set aside.
