Maw Maw Hinson's Tomato Gravy

Serve spooned over roast chicken, steak, or pan-fried pork chops. And, of course, pancakes.


  • 1 1/2 pounds tomatoes, cut into 2-inch pieces
  • 1/4 cup (1/2 stick) unsalted butter, cut into 1/2-inch pieces
  • Kosher salt, black pepper

Recipe Preparation

  • Bring tomatoes and butter to a simmer in a large skillet over medium heat. Cover, reduce heat to low, and simmer gently, stirring occasionally, until tomatoes are softened, 35-40 minutes. Season with salt and pepper.
