- 1 (500g) packet rigatoni or penne pasta
- 675g (1 1/2 lbs) ricotta cheese
- 450g (1lb) shredded mozzarella cheese
- 1 egg, beaten
- 900g (2lbs) passata sauce
- 4 tablespoons grated Parmesan cheese
MethodPrep:15min ›Cook:30min ›Ready in:45min
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and rinse.
- In a medium bowl, mix pasta, ricotta, mozzarella, egg and half of the passata sauce.
- Preheat oven to 190 degrees C (gas mark 5).
- Lightly grease a 23x33cm baking dish and spoon in pasta mixture. Top with remaining passata sauce and Parmesan.
- Bake in preheated oven for 30 minutes; let stand for 15 minutes before serving.

Easy Three Cheese Tortellini Bake
It’s been a while since I’ve shared a casserole with y’all. So today I’m sharing a great one Easy Three Cheese Tortellini Bake. It’s so good you’re going to want to lick the plate.
Three different kinds of cheese take this tortellini bake from good to great. This recipe has Parmesan, Mozzarella, and Romano cheeses. If you’ve been following along with me for anytime at all you know that I have a deep and abiding love for cheese. I mean it’s almost an obsession. I wonder if there’s a support group for cheese lovers?
Honestly, I don’t remember where this recipe came from I just know that it’s one of my favorites. I just love how full of flavor it is. I also love how easy it is to make.
One of the things that makes this recipe so delicious refrigerated pasta. It has a much fresher flavor than dried pastas. For this recipe I use cheese tortellini but you could use beef or spinach if that’s what you prefer.
At my local grocery store I find it in the pasta aisle in a small refrigerated case. If you can’t find refrigerated pasta frozen works just as well. Just follow the directions on the package for preparation for either choice.
The meat sauce is the best part of this recipe in my opinion. I love how it’s seasoned and how full of flavor it is. Seasoning is probably one of the most important parts of making any Italian dish.
This recipe isn’t any different the seasoning is what makes it so delicious. Oregano and garlic are used in pretty much every Italian dish. This recipe calls for a lot of garlic. Four to five cloves finely minced to be exact. You might think that’s a lot of garlic but trust me you’ll love it. I mean how could you not there’s pasta, cheese and garlic.

- In a large pot of salted boiling water, cook spaghetti according to package directions until al dente. Drain, reserving 1 cup pasta water.
- Meanwhile, in a large skillet over medium heat, heat oil. Add garlic and cook until fragrant, 1 minute, then add heavy cream, broth, and 1/2 cup of reserved pasta water. Add cooked spaghetti and toss until noodles are fully coated and liquid is simmering.
- Remove from heat and stir in cheese. Toss constantly, adding more pasta water until sauce reaches desired consistency. Season with salt and pepper and garnish with chives before serving.
This pasta is a blank canvas. and while it&rsquos absolute perfection plain, you can totally mix in things like SAUTEED SHRIMP, GRILLED SKIRT STEAK, or COOKED CHORIZO.
Three Cheese Italian Sausage Pasta Bake
For those of you that follow me on Instagram, you may remember that back in December the waterline to the fridge at our cabin started leaking and caused some serious water damage. Like, part of the ceiling in the basement fell down, serious. We&rsquore thankful we caught it when we did, but the damage was still pretty extensive. So after several months, lots of contractors, dealing with insurance and 9 hours of Steve and me cleaning up after the construction, the cabin is finally put back together.
Last weekend we decided we needed to go up to the cabin just to relax, enjoy ourselves and not do any work. I knew we would be getting together with Steve&rsquos sister and her boyfriend, who both live near our cabin, and I thought it would be fun to have them over for dinner. I served this amazing three cheese Italian sausage pasta bake and it was a perfect choice.
First of all, I was able to make this dish ahead of time, which made entertaining a breeze. Remember, we were spending the weekend relaxing, so I didn&rsquot want to spend a lot of time in the kitchen. All I needed to do was pop this delicious three cheese Italian sausage pasta bake into the oven to bake, make a quick salad, heat up some bread and dinner was served.
The other great thing about this pasta bake is how amazingly good it is. It starts with a quick and easy alfredo sauce. For extra flavor and nutrition, I sautéed some red bell pepper, zucchini, mushrooms and onion. The three cheese part of the dish is a combination of parmesan, feta and mozzarella. Then the star of this three cheese Italian sausage pasta bake is Klement&rsquos Italian Sausage, which I absolutely LOVE. As I said, this recipe can be made ahead of time. To do that, prepare the recipe up to the point where it&rsquos ready to bake. Cover the baking dish tightly with foil and refrigerate for up to 2 days or freeze for up to several months. To bake from refrigerated, bake for 15 minutes covered and then an additional 30 minutes, uncovered, until heated through and cheese is melted and starting to brown. To bake from frozen, bake for 30 minutes covered and then an additional 30 minutes uncovered, until heated through.

What to serve with pasta?
I love pasta. If I could live anywhere in the world, it would probably be Italy, so I could eat homemade pasta day in and day out for the rest of my life.
Not only that, but they have some amazing bread and sweets there as well.

You could really pair it with any vegetable, but a nice fresh crisp salad with some Italian dressing has got to be my favorite combination with this pasta.
I also like to dip my bread in both the pasta sauce and the salad dressing. You can’t go wrong with salad, pasta, and bread.
How Do You Make Three-Cheese Italian Penne?
Begin by cooking your pasta according to package directions. You want to cook the penne to al-dente, leaving a bit of bite to your pasta. Because we are baking this dish, you don’t want it to get mushy in the oven.
1. In a saucepan, melt 3 tbsp butter.
2. Add in minced garlic and whisk for 1-2 minutes until garlic is fragrant.
3. Sprinkle in flour and whisk 1-2 minutes until flour mixture has a nutty aroma.
4. Slowly whisk in 3 cups of milk. Bring to a boil, while constantly whisking, and whisk until thickened.
5. Stir in seasonings (oregano, basil, parsley, salt and pepper). Remove from heat.
6. Stir in grated cheddar, grated mozzarella, and grated parmesan. Stir until cheeses are melted, set aside.
7. Prepare a 9吉 baking pan by spraying with non-stick spray. Add drained pasta to the baking pan.
8. Top pasta with canned diced tomatoes (liquid included).
9. Pour cream cheese sauce on top.
10. Gently toss to combine.
11. Top with bread crumbs and small tabs of remaining butter. If you have leftover shredded cheese, you can add this below the breadcrumb layer.
12. Cover dish with foil. Bake at 350 degrees for 20 minutes. Turn over to broil, and remove foil. Cook for an additional 1-3 minutes to brown the top. Serve immediately.
Crowd-pleasing pasta bake
The end result is a comforting pasta bake that is sure to please any aubergine lovers! Since it&rsquos got a few different layers of cheese through the middle, you end up with little pockets of gooeyness, along with those soft slices of melt-in-your-mouth aubergine, rich tomatoey pasta, and herby pesto. It&rsquos truly wonderful.
The recipe makes 4 good-sized portions, so we quite happily ate this for two nights running. You could also easily double it up if you need to feed a crowd!
