Multigrain Turkey-Mango Club Sandwich

Ingredients

  • 6 strips bacon
  • 1 large Hass avocado, halved, pitted, peeled, and chopped
  • 2 Tablespoons plain Greek-style yogurt
  • 1 Tablespoon lime juice
  • 1/8 Teaspoon kosher salt
  • 6 slices multigrain bread, toasted
  • 4 Bibb lettuce leaves, trimmed to the size of the bread slices
  • 1/2 large tomato, cut into 4 slices
  • 1/4 Teaspoon kosher salt
  • 1/4 Teaspoon freshly ground black pepper
  • 8 slices roast turkey breast
  • 1 ripe mango, peeled, pitted, and sliced thinly

Directions

Preheat the oven to 350 degrees. Line a rimmed baking sheet with aluminum foil, and line a plate with paper towels.

Set the bacon on the foil and bake until golden and crisp, about 15 minutes. Remove the baking sheet from the oven and transfer the bacon to the plate to drain.

In a blender, purée the avocado, yogurt, lime juice, and salt until smooth and creamy, about 25 seconds. Place the bread slices on a cutting board. Divide the avocado spread among the bread slices, spreading it into an even layer.

On top of 2 pieces of bread, divide the lettuce and tomato. Season the tomato with the salt and pepper. Divide the turkey and mango over 2 more bread slices, then place the turkey-mango-topped bread slices over the tomatoes. Invert the last 2 bread slices, avocado side down, over the mangos.

Skewer the 4 corners of each sandwich with toothpicks or cocktail swords. Use a bread knife to divide each sandwich into quarters and serve.

The Club Sandwich is a delicious staple lunch item at most restaurants &ndash so why not make one at home? We love this sandwich with layers of toasted bread, meat, and veggies. Yum! Serve your club sandwich with homemade refrigerator pickles and a cup of broccoli cheese soup (then finish it off with some peanut butter cookies).


Garden Veggie Chickpea Salad Sandwich

Another very healthy and delicious sandwich to try out is a garden veggie chickpea salad sandwich. It’s a great alternative to a tuna or chicken salad sandwich recipes. This veggie sandwich recipe is plant-based and there are many suggestions on ingredients to use, to find something you will really enjoy.

First you make the chickpea salad, which includes chickpeas, green onion, celery, red bell pepper, and dill pickles. The vegetables are then mixed in mayonnaise, Dijon mustard and yellow mustard. The chickpea salad will last you a long time so you can eat it different times during the week.

Then on some multi-grain bread, spread the chickpea salad and add some leaves of your favorite lettuce and other veggies like tomatoes or red onions. You then have a sandwich that tastes delicious and quite easy to make! The great part is that it’s a healthy alternative to put into your new sandwich recipes.


Vegetarian Club Sandwich

This hearty club sandwich is one of my favorite lunch recipes! A creamy spread and lots of veggies perfectly accent smoky marinated tempeh strips.

Someone recently asked me – when do you use tempeh? I responded with, “when I’m tired of tofu and chickpeas… that’s when it’s tempeh time :)” To be honest, no one really knocks down my door begging for more tempeh recipes, but since that interview, I’ve had it on the brain. Tempeh is delicious, so let’s make a club sandwich with it!

Club Sandwich “Meat”

The marinade I created for the tempeh is a smoky mixture that includes tamari or soy sauce, maple syrup, ground cumin, and smoked paprika. When you first mix this together, the flavor is going to be very (very) salty and pungent, but since plain tempeh starts out with literally ZERO flavor, it’ll all balance out in the end.

Speaking of things that aren’t bland, we’re partnering with eureka!® Organic Bread on this post. (You might remember this springy edamame sandwich from last year!). Their bread is seriously tasty. It’s vegan, non GMO, and full of good-for-you grains and seeds. Most importantly, it’s soft, chewy and delicious.

How to Make A Great Club Sandwich

Once your crispy, golden brown cooked tempeh is ready, it’s time to load up your sandwich! Instead of mayo, I slathered this vegan sandwich with 2 flavorful spreads. The first is a lemony garlic white bean spread. The second is a sun dried tomato spread that I made by blending half of the original white bean spread with a few sun dried tomatoes. Of course, if you happen to have hummus on hand, you could use that in place of both.

I stacked my sandwiches with peppery watercress, crisp cucumber slices, and ripe avocado slices.


Recipe Summary

  • 1 ripe avocado
  • 2 tablespoons light mayonnaise
  • 1 teaspoon lemon juice
  • 1 clove garlic, minced
  • 8 thick slices multigrain country-style bread, toasted
  • 4 ounces thinly sliced cooked turkey
  • 4 ounces thinly sliced cooked ham
  • 4 slices bacon, crisp-cooked and halved crosswise
  • 4 leaves romaine lettuce
  • 1 tomato, thinly sliced

Halve, seed, and peel avocado. In a small bowl mash one of the avocado halves stir in mayonnaise, lemon juice, and garlic. Thinly slice remaining avocado half.

Layer four of the bread slices with turkey, ham, avocado slices, bacon, lettuce, and tomato. Spread remaining four bread slices with mashed avocado mixture place on sandwiches, spread sides down.


Recipe Summary

  • 2 slices thick-cut bacon
  • 2 tablespoons mayonnaise
  • 3 slices multigrain bread
  • 2 slices tomato
  • 2 Bibb lettuce leaves
  • 2 1/2 ounces sliced roasted turkey
  • 3 tablespoons pimiento cheese

Cook bacon in a small skillet over medium until crisp, turning occasionally, about 8 minutes. Drain on paper towels. Spread 1 tablespoon mayonnaise each over two slices of bread. Top one slice with tomato slices, lettuce, and bacon top with second slice of bread, mayonnaise side down. Top second slice of bread with turkey. Spread pimiento cheese over third slice of bread and place on top of turkey to make a club-style sandwich. Cut into triangles and secure with toothpicks. Serve immediately.

  • 2–4 tablespoons (30–59 mL) of cooking oil (such as peanut oil)
  • 2-4 boneless, skinless chicken breasts
  • 1-2 tsp (2.7-5.4 g) of red chili powder for a spicy flavor, if desired
  • 1 tsp (2.3 g) of crushed onions
  • Remove the chicken from the pan when it's golden brown and has cooked to an internal temperature of 165 °F (74 °C). Place the chicken on a cutting board to let it rest before slicing.
  • If you don't have a thermometer, slice a piece of chicken in half. Make sure the juice runs clear and there's no pinkness on the inside.
  • Use Italian bread, tiger bread, baguette, or olive-cheese bread.
  • Top with slice dill pickle, raw red onion, lettuce, and tomato.
  • Add mayo, mustard, or ketchup to taste.

The finalists in this category struck a nice balance of crispness while still being tender. We like how the winning pita crackers have no saturated fat and the lowest sodium in the category.

We were happy to see the crackers in this category still qualified for our sodium requirement of 250 milligrams or less, and they also had some of the highest amounts of fiber per serving.
