It relaxes me and I love to try all kinds of doughs, especially bread doughs. For me, homemade bread is the best in the world. Just the fact that it's made by me, that it smells great all over the house and that I can eat a hot slice greased with butter motivates me to bake my own bread. I don't always do this, unfortunately for lack of time. but I try to make bread as often as possible. I haven't tried natural mayonnaise bread yet, but I promise to do this experiment and come back with impressions and if all goes well, and with a video recipe.

This time I chose to show you how I make bread. It is a wonderful recipe for milk bread, extraordinary for holiday meals or for special occasions with loved ones. Because I wanted this recipe to be as accessible as possible to everyone, I chose to knead the bread in three, one of the simplest possible braids, so don't be scared, it's neither complicated nor meticulous. If you have never made bread before, now is your chance to start. I have to tell you it's NOT HARD. Even if you don't take my word for it, I challenge you to try. The recipe is tested, adapted and designed in such a way that you get a wonderful bread.

Buuun! Now that we have the courage, let's get started. First of all, you need to have eggs at room temperature. If you haven't taken them out of the fridge in time, there is a solution. Put them in hot water for approx. 10 minutes and they will be perfect. We then heat the milk so that it does not burn on our finger, it must be warm but not hot because it will kill the yeast and the dough will not grow. After you have done all this, you just have to mix all the ingredients and knead the dough. You can use a mixer with a dough hook or simply knead by hand. It doesn't matter that you don't know how to knead. Just try it. The more you knead, the more experience you will gain.

When the dough is smooth and supple, it means that it is perfectly kneaded and that you will get an extraordinary braided bread. Kneading develops gluten from flour, gluten that gives bread the right texture. Then let it rise in a warm place, enough to double its volume. To knead the bread, you have to watch the clip but it is easy and does not last long. If you know how to braid your hair, you will know how to make braided bread. And with that, I'm done. All you have to do is bake the bread and then enjoy it. You got an absolutely wonderful braided bread. Fluffy, slightly crunchy on the outside and with a demented taste. Only good for the next holiday, right?


Spelled wheat bread

A spelled wheat bread healthy and easy to prepare and which is perfect for the Christmas or Easter meal. If you love both the aroma and the taste of homemade cakes, then you should try this sweet and healthy spelled wheat bread.

No braided bread bought in the store can be compared in taste to one baked at home, and from a nutritional point of view, the homemade one is also better. Contains spelled flour, healthier and full of nutrients, coconut oil and cane sugar. If you want it to be lactose free, you can use vegetable milk, you can also give up eggs so you can serve it to people allergic to these ingredients.

In addition, you can add whatever ingredients you want - nuts, raisins or other dried fruits. It is very tasty eaten the day it was cooked and I must admit that we eat it all on the same day. I recommend you heat it if you want to eat it the day after baking, it will have an exceptional taste.

Here is my wholemeal bread braided in 5 (spice):

When I saw the final result I instantly sulked. Although I observed the stages and times (for leavening, growing) the loops from the bread, after they grew, they & quotrupt & quoted in some places, and they didn't look as beautiful as when they were woven.

I thought, changed my mind and twisted all day. I really wanted to see loaves of bread in my kitchen too. So I went to buy a bag of white flour and made white bread, even though I knew I could only offer it and not eat it.
It was another story. Here it is (braided in 5, the other method) warm, steamy:

And now comes the question: What is the secret of wholemeal dough? I saw that you were working in a video on a loaf of bread in 6, with wholemeal dough and you said that it would turn out nice. I only work with it and I knew it would break when braided (I also suffered from spirals, pretzels, etc.). But when it comes to such beautiful braids, it's even worse that they don't come out properly. I ask you especially because I only eat wholemeal bread.

Until another one, thank you for such a source of inspiration. Next on the list must be a bread woven in 6, even if I only make it white and only for my others.

I also kneaded the dough with wholemeal flour, because I wanted to cut more calories from me and my family, not because it would come out as good as those from white flour. Don't get me wrong: wholemeal breads also come out well, but those made from white flour are fluffier, break into strips, grow more evenly. No, that is quality flour (from the point of view of the pastry chef, not the nutritionist) so it is clear that finer preparations must be made from such flours. In any case, the dough with wholemeal flour that I kneaded had a fairly high content of white flour, somewhere at 65% and only 35% wholemeal flour.
