Mix the yogurt with the sugar, essences, lemon peel, semolina and 8 beaten eggs in a bowl. Grease a rectangular tray with a brush with melted butter, then put 4 sheets of pie so that they sit on the edges of the tray, grease them with butter, then put 2-3 tablespoons of yogurt and raisins on top. Put the next 4 sheets greased with butter in the middle of the tray, on top and yogurt and so on until the sheets and composition are finished.

Before putting the last sheet on top, gather the edges inwards, then put the pie sheet and grease it with melted butter. It is good to have 2, even 3 sheets on top.

Prick the surface with a knife, then mix the remaining 2 eggs with sour cream and place the composition on top, over the pie. Put the tray in the oven on low heat for an hour, an hour and a half, and after it is baked, sprinkle powdered sugar on top.

Then place four more oiled pie sheets on top and the filling again. Repeat the operation until you finish the sheets and the composition with yogurt. After that, put the cake in the oven for about 30 minutes or until you notice that it has browned slightly. When ready, cover it with a paper towel on which you placed a cloth towel. Let it cool so you can then enjoy it leisurely.

INGREDIENTS

1 packet of fine pie sheets (preferably fresh)

2 ampoules of vanilla essence

INSTRUCTIONS

First melt the butter in a kettle over low heat or in the microwave. After it has cooled, mix it with the oil. With this mixture we will grease the sheets.

We count how many sheets of pie there are and divide them by 3, because we will use 3 layers of sheets.

Now we will prepare the composition for the pie: in a large bowl, break the eggs and add the sugar. Mix well with a whisk so that it homogenizes. Then add the yogurt, vanilla essence, semolina and a little salt. Mix everything until you get a homogeneous composition.

We prepare the tray in which we will bake the pie. We line it with baking paper and grease it with a kitchen brush with the mixture of butter and oil. Place the first sheet of pie in the pan and grease this one, then the next one and so on until we finish 1/3 of the number of sheets (it should mean about 5-6 sheets). Now pour half of the yogurt and egg mixture and sprinkle half of the raisins over it. Over this we will place the second layer of sheets, just as we did in the first layer (greasing each sheet separately). When I finished placing the second layer of sheets, I poured the rest of the composition on top (keeping aside half a glass of the egg yoghurt composition). Sprinkle with the rest of the raisins. We do the same with the last layer of sheets. When we have finished placing all the sheets, we pour the composition placed in the glass on top and spread it with the brush on the entire surface of the pie.

Put the pie in the preheated oven at 170 degrees, on level 2 of the oven, and bake for about 45-50 minutes. If after 20-30 minutes it browns too much on the surface, cover it with aluminum foil so that it does not burn.

After about 50 minutes we take it out of the oven and leave it for at least 20 minutes to cool and only after that we can cut it.


Yogurt and urda pie

Yogurt pie

Cut the butter into cubes and mix.
Add the sugar little by little.
Incorporate eggs one by one.

Add sour cream.
Sift the flour and mix it with the baking powder and salt.
Incorporate the flour little by little and knead.
A soft but non-sticky dough should result.
Put the dough on the floured table and divide it into 3 pieces.
Using the rolling pin, spread 3 sheets of dough.
Filling
Drain the whey yogurt and then mix it one by one with eggs, powdered sugar, vanilla sugar, rum essence, salt and then semolina.
Mix with a wooden spoon.
We get a creamy and flavorful filling.

Grease the tray (32/22) with oil and line it with baking paper.
Place a sheet of dough on the bottom of the tray, using the rolling pin.

Remove the excess dough from the edges of the tray.
Divide the filling in half.
Put a part of the filling over the dough sheet and level it.
Cover with the second sheet of dough and remove the excess from the edges.
Pour the rest of the filling and cover the third sheet of dough, removing the excess from the edges.


Put in the preheated oven at 180 degrees for about 50 minutes.
10 minutes before taking it out of the oven, grease the pie with a well-beaten egg yolk.
When the pie is nicely browned and well done (we do the toothpick test), take it out of the oven and let it cool in the pan.

It looks like a vanilla cream. The texture of this yogurt pie is great: crispy and reddish sheets and light as a flake filling!

I recommend you to use yogurt as fat as possible (with 10% fat, Greek yogurt type) because the weak one coagulates in the form of lumps and leaves a lot of whey.

Pie sheets are the thin ones for strudel (no puff pastry!). They can be made at home, as I did at baclava recipe.

The first thing to keep in mind when you start this recipe is to let the butter melt, and the milk must be lukewarm.

Therefore, we start making the dough for donuts. Thus, we mix the yogurt, the vanilla sugar, the yolks rubbed with sugar, a little salt and the melted butter. Then, dissolve the yeast in lukewarm milk and form a mayonnaise, which must be mixed with flour and kneaded by hand for a few minutes.

The next step is to grease a bowl with a little oil and put the dough in it, which should rise for half an hour. Don't forget to cover the bowl with a towel and leave it in a warm room.

After you have noticed that the dough has increased in volume, roll out a thin sheet and with the help of some rings make the shape of the donuts. Then you have to let the dough rise for another 20-30 minutes.

And now it's time to cook the donuts. For this we need a pan in which to put a lot of oil and after we see that it is hot enough we put the dough in the pan. Fry the donuts on each side and then remove them on a paper towel. In this way, the excess oil is soaked in the towel.

These donuts can be eaten with jam or chocolate. You can also powder the donuts and eat them when they are still hot.
