Now take the crust, divide it into two pieces and spread with the help of the twister two sheets with a diameter of about 30 cm (or to fit in the large tray of the oven). Press the sheet at the base with breadcrumbs (it will absorb moisture from the cheese). Distribute the filling as follows: a round pile in the middle of the sheet, and the rest along the edge, forming a disc (do not forget to leave 2 cm to join the edges, see the image below).
Cover the first coca disk with the second and seal the edges with the teeth of a fork. We put a saucer in the center of the pie and drill around it with a fork (we do this to encourage steam to come out). We cut strips with a width of 2 cm and turn them exactly as seen in the picture. Cheese and spinach pie

An even more current pie, as we will soon be able to buy fresh spinach at the market. A! Spring spinach, combined with a white, stony, cloudy sheep's milk - a delight! (Telemea de Sibiu, telemea de Novaci, telemea de Bâltişoara, ori de Arcani etc. etc.!
A pack of "filo" strudel or baclava sheets
200 g Telemea cheese
500 g canned fresh cheese
500 g spinach
100 g butter
100 ml oil
a little semolina
Melt the butter, prepare the strudel sheets, greasing them with a mixture of oil and melted butter. Place 3 sheets, one on top of the other, and prepare the filling as follows: Boiled and drained spinach (if it is tender, no longer needs to be chopped) mix with the grated telemeau and the 4 beaten eggs.
Sprinkle a little semolina over the sheets, spread the mixture of cheese, spinach and egg on half a sheet, close the ends, roll, put the pie in the pan, greased with it, and bake it in the oven heated to 200 degrees, 30 minutes, until it turns golden.

Greek pie with spinach
1 egg, 350 g crushed feta, 3 green onions, finely chopped, 2 tablespoons fresh dill, chopped, 4 tablespoons fresh parsley, chopped, 1/2 teaspoon ground pepper, 2 teaspoons coarse salt, 400 g canned spinach, 50 g long grain rice, 3 finely chopped onions, 120 ml olive oil, 80 ml cold water, 1 teaspoon salt, 50 gunt or vegetable margarine, 200 g white flour
Method of preparation
Make a dough from 200 g of flour mixed with salt, in which you add diced butter. Mix all these ingredients well with your fingers until small cocoa beans, like peas, are chewed. Now you can add 80 ml of ice-cold water and knead again until it incorporates and forms a soft dough. Form a dough disk, wrap it in cling film and refrigerate for an hour.
Preheat the oven to 180C / gas stage 4 and grease a round pie tray.
Divide the dough into 2 equal parts after it has cooled. One of the sides spread it with your fingers on the base of the tray and bake it blindly for 20 minutes. Remove the baking paper and put it in the oven for another 10 minutes.
Meanwhile, prepare the filling.
Heat the oil in a pan over medium heat. Add finely chopped onion, stirring occasionally, until golden brown. Now you can put the rice and leave them on the fire together for 2-3 minutes. Put the canned spinach and let it simmer over medium heat for 10 minutes. Season with salt and pepper and mix the fresh greens in the spinach composition.
Drain the spinach filling in a strainer to make sure it will not soften the pie dough. Let it cool in a strainer. Once it has cooled, you can incorporate the feta cheese and pour the filling into the blind baked dough.
You will roll the other part of the dough on the table lined with flour in a disk large enough to cover the tray.
Place the sheet of dough on top of the filling and press to the edges so that it closes like a lid. Grease the surface with beaten egg and bake in the oven for 40 minutes until golden brown.
Wash and scald the spinach then chop it finely. Grate the telemeau and mix it with the milk, 3 tablespoons of oil. Add the squeezed and finely chopped spinach, season with salt and pepper. Then add the beaten egg whites and mix lightly.
