    Preheat oven to 400° F.

    In a large pot of boiling, salted water, add pasta and cook until slightly underdone. Drain, rinse in cold water, then drain well. Place back into the pot, off the heat, and toss with 1 tablespoon oil.

    In a large skillet, heat remaining oil over medium-high. Add ground turkey ad turkey sausage. Cook, stirring to crumble, until browned and cooked through, about 10 minutes. Stir in garlic, cook until fragrant, about 1 minutes. Season with salt an fresh ground black pepper and cook for 1 more minute. Stir in tomatoes, bring to boil, then reduce heat and simmer until thickened, about 15 to 20 minutes.

    Coat a 9-inch springform pan (I used 4 4-inch individual springform pans)with cooking spray. Add Parmesan cheese into the pot with the pasta and toss well to coat. Tightly pack pasta into springform pan, standing each piece on end. Scoop about 2 cups of the meat mixture on top of the pasta, gently pushing it into any of the holes. Place into the oven and bake for 15 minutes. Remove and scatter the top with mozzarella. Place back into the oven and bake until the cheese has melted and turned golden, about 10 to 15 minutes. Remove from the oven and let cool at Least 10 minutes before serving. Serve with any remaining sauce on the side or on top.

  • 1 large onion, chopped
  • 2 pounds mild Italian sausage links, casings removed

Heat oil in a large saucepan over medium heat. Add onion and cook until soft, 3 to 4 minutes. Add sausage stir to break up lumps and cook until lightly browned and crumbly, 6 to 8 minutes. Drain and discard grease.

Add undrained tomatoes, water, basil, oregano, and parsley to the pan bring to a boil over medium heat. Reduce heat to low and cook, partially covered, for 25 minutes.

While the sauce is cooking, preheat the oven to 350 degrees F (175 degrees C).

Bring a large pot of lightly salted water to a boil. Cook rigatoni in the boiling water, stirring occasionally until tender yet firm to the bite, 10 to 12 minutes. Drain, rinse under cool water, and drain again. Transfer to a large bowl and set aside.

Uncover the sauce and increase heat to medium. Cook, stirring occasionally, until sauce thickens, 6 to 8 minutes. Remove from the heat.

Add 2/3 of the sauce to the pasta toss to combine. Stir in mozzarella cheese and 1 cup Parmesan cheese. Transfer to a 9x13-inch baking dish, pour remaining sauce over top, and cover with aluminum foil.

Bake in the preheated oven for 25 minutes. Uncover, sprinkle with remaining Parmesan, and bake until lightly browned, about 10 minutes longer.

Overview: How to Make Mini No-Bake Cheesecakes

  1. Make room in your refrigerator. Two muffin pans need to squeeze in there!
  2. Line two standard 12-count muffin pans with liners. Cupcake liners are key– you won’t be able to remove the cheesecakes without them.
  3. Combine the crust ingredients. You need graham cracker crumbs, melted butter, and brown sugar. Butter and moist brown sugar (as opposed to regular granulated sugar) help this crust set up properly. Spoon 1 and 1/2 Tablespoons of the crust mixture into each and use the back of the spoon to pack it down into the liner.
  4. The next step is optional. To really ensure that these tiny crusts set up properly, I recommend a quick 5 minutes in the oven. Now I know these are NO-BAKE– and the filling still is– I simply found that the crust is sturdier after 5 minutes of baking. But if you can’t use an oven, you can definitely skip it. The crust will just be a bit crumblier.
  5. Make the cheesecake filling. These no-bake cheesecakes set up because we add homemade whipped cream. First, whip heavy cream into stiff peaks and set it aside. Next, combine the rest of the filling ingredients including cream cheese, sugar, sour cream, lemon juice and vanilla extract. Gently fold in the whipped cream.
  6. Add filling over crusts. I’ve made these countless times and prefer piping the cheesecake filling on top of the mini crusts. You can certainly spoon the filling onto the crusts instead, but piping isn’t quite as messy. Feel free to use a piping bag with a large tip (star or round) or you can snip the corner off of a zipped-top bag.
  7. Refrigerate until set. The mini no-bake cheesecakes set up in about 3 hours. I don’t recommend using the freezer to speed this up because the graham cracker crust will quickly freeze before the filling does. A frozen buttery crust is difficult to bite.

Baked Rigatoni

My neighbors just welcomed a new baby boy into their home. Poor thing, shes been having serious back issues so the other day I walked over and brought some dinner for them. I decided to make a pan of baked rigatoni, because lets be honest there aren’t many things as comforting as a pan of baked pasta, are there? It takes less time than making a lasagne, without any sacrifice of flavor. I made this version meatless with 3 different cheese, mozzarella, ricotta with spinach and grated romano cheese, I’ve also made a meat version many many times in my life adding tiny meatballs between the layers, a big hit for a party because it all can be put together a day ahead of time and then heated right before serving. A big pan of baked rigatoni would also be a great addition to your Easter dinner, because you always need to have a little pasta, no?

I love the large ridged rigatoni it holds the sauce perfectly and visually it looks so good. The box says to cook the pasta for 14 minutes but you’ll want to under cook it since it will be baking in the oven. I cooked the one pound box for 10 minutes then drained the water and tossed the rigatoni into a bowl and gave it a quick drizzle of olive oil with a couple of ladles of marinara. Be sure to have enough marinara made because you don’t want the pasta to dry out in the baking process. If you’re buying your marinara in a jar I would buy two, but please try and make your own if you don’t normally do so, it’s such a difference! I buttered the inside of a 13 x 9 disposable pan, ( since I was giving this dish away) spread homemade marinara sauce on the bottom and then 1/3 of the rigatoni, then with a make shift piping bag I added dollops of ricotta all around the layer of pasta as well as good sprinkling of shredded mozzarella, next added the grated romano cheese all over. Repeat 2 more times starting all over with the sauce again. I found this bottle of wine, Rigatoni Red , I sure hope it was good because I strictly bought it for the label which I just loved, it was the perfect compliment to my dish don’t you think?

  • 14 OZ. of rigatoni
  • 6 CUPS of beef broth
  • 1/2 CUP of red wine
  • 2 2/3 OZ. of ground beef
  • 2 2/3 OZ. of ground veal
  • 2 2/3 OZ. of ground pork
  • 2 OZ. of chopped celery
  • 1 3/4 OZ. of pancetta
  • 1 3/4 OZ. of onion
  • 1 3/4 OZ. of carrots
  • 1 3/4 OZ. of milk
  • 2 1/8 TBSP. of tomato paste
  • 2 of large eggs
  • Parmigiano Reggiano, grated
  • Bouquet garni (sage, rosemary, bay leaf, thyme)
  • unsalted butter
  • extra-virgin olive oil
  • salt
  • pepper
  • 2 CUPS of milk
  • 2 1/2 TBSP. of all-purpose flour
  • 1 1/3 TBSP. of unsalted butter
  • nutmeg
  • salt

Method

Cut the pancetta, celery, onion and carrots into 1/4" cubes. Sauté them in a large saucepan with a thin coating of butter over medium heat.

Bring the broth to a boil in a saucepan. In the meantime, brown the minced meat in a separate pan with 2 Tbsp. of oil over high heat, crumbling it with a whisk. After around 5 minutes, add it to the saucepan with the pancetta, celery, onion and carrots. Add the wine and cook for 3-4 minutes season with salt and pepper, add the tomato paste and bouquet garni and cover with the boiling broth. Simmer gently for at least 2 1/2 hours, adding a couple of ladles of broth from time to time, as the liquid evaporates. At the end, add the milk and cook for another 10 minutes.

For the béchamel: First, prepare the roux: melt the butter and add the flour while stirring constantly with a whisk until incorporated. Season with salt and nutmeg. Bring the milk to a boil, pour in the roux and cook for 4-5 minutes stirring constantly until the béchamel is glossy and thick.

For the torta: Bring water to boil in a large pot and add salt. Add the rigatoni to the salted boiling water. Drain 1 minute before the instructions on the package, being careful not to break them.

Mix the ragù with the eggs and set aside 7-8 tablespoons of it. Use the rest to dress the rigatoni.

Butter the bottom and sides of a springform pan (ø 9 1/2"). Arrange the rigatoni vertically in it. Spread the remaining ragù over the rigatoni, then béchamel, dollops of soft butter and 2 Tbsp. Parmigiano. Bake in a convection oven for around 20 minutes, until the surface has a golden crust.


The recipe attracted a fair amount of criticism

Many said that the recipe at its heart is not all that different from lasagna (the individual components are largely similar, excluding the bechamel). Others compared it to manicotti and cannelloni, both established pasta dishes which involve filling a noodle tube with a meat or vegetarian mixture, then adding sauce and baking, although they are typically laid horizontally. String cheese and Prego tomato sauce straight from the jar are notably absent from more traditional recipes though.

By this week, the TikTok video had made its way onto Twitter, where it was reposted by a detractor who had two choice words for the recipe: "Absolutely cursed." Since it was tweeted on Friday April 2, it has been viewed 1.7 million times. The post has almost as many combined replies and quote-tweets as it does likes and retweets, suggesting that it provoked some strong reactions.

The response on Twitter largely echoed the TikTok comments, with many people saying that it's essentially "just a pasta casserole." Some found that criticism of the dish to be "elitist and snobby," and highlighted that just because a food item that is accessible to people with lower incomes, it shouldn't be seen as "cursed."

Some Twitter users echoed the lasagna comparison, as well as suggesting it was a similar concept to baked ziti, an American-Italian dish that also uses tubular pasta, covered with tomato sauce, topped with cheese, and cooked in the oven. The original Twitter poster, who goes by the username @WilhelmDerErste, responded to the comments saying, "Everyone calling this basically Lasagna proves that they have never actually had Lasagna alla Bolognese."

How to Make Rigatoni Pasta Bake

In a large pot of boiling water, cook pasta according to package directions, until al dente.
In a 3 Qt saucepan, brown ground beef and sausage, on medium, until crumbly and cooked through. Stir crushed tomatoes, tomato sauce, and tomato paste. Stir in garlic powder, Italian seasoning, sugar, salt, and pepper.

Allow to simmer 3 – 5 minutes, allowing the flavors to combine. If the sauce seems a little thick, add a small amount of water. Gently stir pasta into sauce.
Grease a 9 x 13 inch baking dish with cooking spray. Add half the pasta and sauce mixture to the baking dish. Sprinkle half the Mozzarella and Parmesan over the pasta. Repeat with a second layer.
