  • 1 dessertspoon soya sauce
  • zest of 1 lime
  • 3 green finger chillies with seeds, finely chopped
  • 4 spring onions, roughly chopped
  • 250g mushrooms, roughly sliced
  • 250g baby tomatoes, halved
  • 1 bunch pak choi, roughly chopped
  • 1 (400ml) tin coconut milk
  • juice of 1 lime
  • 1 handful fresh coriander

  1. Pour the fish stock into a saucepan over a medium heat and gently simmer. Add chicken cubes, fish sauce, ginger, lemongrass, garlic, soya sauce and lime zest. Cover and simmer until chicken is cooked and no longer pink in the centre, roughly 20 to 30 minutes.
  2. Add the chillies and simmer for 5 minutes. Taste to see if extra seasoning is needed as per your taste. Remember coconut milk will be added so you will need to take this into consideration with the heat of the chillies.
  3. Add the vegetables and lightly simmer for 3 to 4 minutes. The veg wants to still have some texture. A good guide is to ensure the skins of the tomatoes don't come off. Add coconut milk, juice of lime and stir ensuring any lumps of coconut milk have dissolved; heat through. Just before serving, add a handful of fresh coriander to taste then ladle into warmed bowls and serve.

Tom Kha Gai Thai Chicken Coconut Soup

Growing up we would frequently go out for Thai food both locally or while traveling. Without fail, my mom would always order Tom Kha Gai, a Thai Chicken Coconut Soup. We love eating and cooking Asian food in our house which is why I’ve shared hundreds of Vietnamese, Japanese, Thai, and Chinese inspired recipes with you all over the years. Well balanced, vegetable forward and full of bright flavors, authentic Asian food is often quite healthy and nutritious.

Made with creamy coconut milk and fragrant aromatics such as ginger and lemongrass, this soup is satisfying, comforting and perfectly balanced.

Sweet, spicy, salty and sour, it is everything I look for in a perfect bowl of soup. For added meatiness and umami flavor, sliced mushrooms are added to the broth along with shredded chicken.

Any type of shredded cooked chicken will work – whether it’s leftover chicken from earlier in the week or a rotisserie that I grabbed during the day, this soup is meant to be easy and effortless.

No lemongrass? No problem! Add a few thinly sliced pieces of lemon peel and remove before serving.

Speaking of serving, be sure to garnish with fresh cilantro to serve. The bright, fresh herbs will complement the sweet and creamy soup perfectly.


Preparation

    1. Cut off and discard top of lemongrass, leaving 6-inch stalks, then finely chop. Cook lemongrass, shallots, and garlic in oil in a large heavy pot over medium-low heat, stirring occasionally, until well browned, 12 to 15 minutes.
    2. Add stock, reserved tomato juice, tamarind, fish sauce, chiles, lime leaves, and ginger and simmer, uncovered, 30 minutes.
    3. While soup simmers, freeze chicken breast just until slightly firm, 20 to 30 minutes, then thinly slice crosswise.
    4. Strain stock through a fine-mesh sieve into a large saucepan, pressing hard on and then discarding solids. Return to a simmer and stir in chicken, diced tomatoes, snow peas, and basil. Gently simmer just until chicken is cooked through, 1 to 2 minutes. Season with additional fish sauce and salt.

    • 2 tbsp Thai red curry paste
    • 200 ml reduced-fat coconut milk
    • 750 ml vegetable stock, made with 1 vegetable stock cube
    • 1 tbsp fish sauce
    • 1 tsp Fairtrade light brown soft sugar
    • 180 g pack raw peeled king prawns
    • 325 g pack mixed vegetable stir-fry
    • 4 spring onions, trimmed and finely sliced
    • 300 g rice noodles
    • Zest and juice of 1 lime
    • 25 g fresh coriander, leaves picked, washed and chopped, plus extra leaves to garnish
    • 50 g young leaf spinach

    Heat a deep frying pan over a medium heat. Add the curry paste and cook for 1 minute. Add the coconut milk, stock, fish sauce and sugar. Bring to the boil, then reduce the heat and simmer for 2 minutes.

    Add the prawns and cook for a further 2 minutes. Stir in the vegetable stir-fry, spring onions, noodles and lime zest. Simmer for 2-3 minutes, until the prawns are cooked through and piping hot. Stir in the lime juice and chopped coriander.

    To serve, divide the soup among bowls, then add the spinach and garnish with the extra coriander.


    How to make Red Thai Curry Chicken Noodle Soup:

    Step 1 - Have all your ingredients ready.

    Step 2 - Heat the oil in a large pot over medium heat. Add chicken and sauté until just browned about 2 minutes. Add garlic and ginger and cook until fragrant, about 1 minute.

    Step 3 - 6 - Stir in the curry paste, coconut milk, vegetable broth, lime juice, coconut sugar, fish sauce, and dried mushrooms. Bring to a boil (this will take about 10 minutes) then reduce heat and simmer for about 5 minutes to let the flavors develop.

    Add rice vermicelli to the soup and cook according to package instructions (mine took 2 minutes).

    To serve, scoop out rice vermicelli into 4 bowls (I used kitchen tongs), ladle soup on top and garnish with lots of cilantro, chopped scallions, a few red chilli slices, and a couple of lime wedges. Serve immediately (see notes about making ahead/not serving immediately).


    Directions

    1. Heat oil in large non-stick pan over medium heat. Add chicken and cook, stirring occasionally, about 3 minutes. Add onion, garlic (hubby can't take garlic, so it's not in the ingredient list), ginger and red pepper flakes (pepper flakes also not in ingredient list cuz I don't use 'em) cook for 1-2 minutes longer until mixture is fragrant.

    2. Transfer chicken mixture to Slow Cooker. Ad celery, carrots, pumpkin, mango nectar, lime juice, almond butter, broth and 2 cups of water stir to combine. Cover cook on LOW 8 hours or HIGH 4 hours.

    3. Stir in rice vinegar and cilantro if you want cilantro. Mix coconut mil and cornstarch together in a small mixing bowl. Stir mixture into soup. Turn setting to HIGH. Simmer, uncovered, 10 minutes or until soup thickens.

    4. To serve, put rice in soup bowls. Ladle soup around rice. Sprinkle with garnish.

    To make this dish, first marinate the bite size chicken thigh or breast meat in fresh spices. Then, wrap the marinated chicken pieces in aromatic green pandan leaves. For a juicier texture, chicken thigh is recommended. When fried, the pandan leaves infuse the chicken meat with its naturally sweet taste and soft nutty aroma.

    Aside from the beautifully wrapped appearance, the pandan leaves certainly heightens the taste of the succulent fried chicken wrapped in it. The combination of freshly grounded spices and fragrant pandan leaves makes a unique blend of aroma and spices, all in one.

    I nipped into my local Thai food shop at the weekend to get some crucial ingredients for my planned Thai soup of yumminess. I’m sure Waitrose stock some of the stuff on my list, but there’s something a lot more charming about an authentic store on your doorstep.

    In true Thai style, the guy that runs it is super nice and helpful – immediately showing me where everything is I needed and even giving me tips on freezing lemongrass and rehydrating the somewhat shrivelled galangal.

    So with a bagful of exotic loveliness I headed home and got the soup on. The recipe is from the beautifully photographed book Thai Food and Cooking by Judy Bastyra and Becky Johnson. We bought it from the airport on our way home from Thailand when we couldn’t bear the thought that our holiday was finally over.

    To be honest we’ve not attempted much out of it. Matthew tried to make a Thai omlette once, with distrous results. I guess we’ve not trusted the book since, and it certainly knocked the confidence of Mr B’s kitchen prowess.

    But enough years have passed for me to take a deep breath and try again. It was a good call because the resulting soup was creamy, fragrant and, well, quite beautiful.

    Let’s face it, soups aren’t normally on the menu on such sweltering days, but the Thai flavours just made it seem right somehow.

    Not forgetting the delicious home made chicken stock and left over chicken meat from the roast earlier in the week. That was a fabulous contribution to the mix.

    I’m not sure what’s going on with my coriander though. Since we harvested the first batch of leaves it’s come back all frondy – it looks more like dill frankly. But it still tastes like coriandar. Weird. Any ideas anyone?!

    Galangal, chicken and coconut soup

    Ingredients

    4 lemon grass stalks, roots trimmed
    2 x 400ml cans coconut milk (use half fat if you want it to be less lardy)
    475ml chicken stock
    2.5cm piece of fresh galangal, peeled and thinly sliced (it’s a member of the ginger family in case you’re wondering)
    10 black peppercorns, crushed
    10 kaffir lime leaves, torn
    300g skinless, boneless chicken breast portions, cut into thin strips (I used leftover roast chicken morsels)
    115g button mushrooms (halved if large)
    50g baby corn cobs, quartered lengthways
    60ml fresh lime juice
    3 tbsp Thai fish sauce
    chopped fresh red chillies, spring onions and fresh coriander leaves, to garnish

    1. Cut off the lower 5cm from each lemon grass stalk and chop finely. Bruise the remaining pieces of stalk. Bring the coconut milk and chicken stock to the boil in a large pan over a medium heat. Add the chopped and bruised lemon grass, the galangal, peppercorns and half the kaffir lime leaves, reduce the heat to low and simmer gently for 10 minutes. Strain the soup into a clean pan.

    2. Return the soup to a low heat, then stir in the chicken strips, mushrooms and corn. Simmer gently, stirring occassionally, for 5-7 mins, or until the chicken is cooked.

    3. Stir in the lime juice and fish sauce, then add the remaining lime leaves. Ladle into warm bowls and serve, garnished with chopped chillis, spring onions and conriander leaves.

    I’ve got a decent amount left in the fridge for my lunches this week, which’ll help me move on from my tomato and mozzarella obsession!

    I’m steadily using up the chicken stock. I’ve done this soup, a tasty pea risotto for the kids and i’ve got one more hit left which i’m saving for some courgette and lemon couscous later in the week.
