With a fairly high melting point, it is the most used type of grilled or pan-fried cheese. It can be associated with many ingredients, but in my opinion it goes great in salads with fruits and seeds.
Today I present a halloumi salad with chameleon apples, almonds and blueberries.

Ingredients

  • 2 green apples approximately 350-400 g
  • 300 g haloumi
  • 1 tablespoon brown sugar
  • 50 ml of olive oil
  • 1 lemon
  • 1 tablespoon Dijon mustard
  • 100 g of salad mix
  • 40 g ripe almonds
  • 50 g of blueberries
  • 2 slices carrots
  • Salt and pepper to taste

Step by step method

We wash the salad and wipe it with water and break it into pieces. We clean the carrot and cut it very finely and then we mix it with the salad. Cut the apples into thicker slices, fry them over high heat with a tablespoon of olive oil, brown sugar and 2-3 tablespoons of lemon juice until caramelized. Be careful not to fire small or medium because they will soften and have no texture.

Slice 3-4 pieces of haloumi per serving, grease with olive oil and put them on the hot grill for a few seconds on each side, just enough to catch traces of grilling.

From the mustard, salt, pepper, lemon juice and the remaining olive oil we will make the dressing. We assemble as follows: salad mix, dressing, slices of cheese and apples, almonds and blueberries and at the end again dressing Simple, tasty but especially healthy! I wash the salad and let it drain in a strainer.

I prepare a dressing of lemon juice, oil and a drop of salt which I pour on top. It's time to place the pieces of ham, grate thin slices of Parmesan cheese with a vegetable cleaner, then sprinkle some pomegranate seeds.

We wash the arugula leaves and dry them on a paper towel to make them water. Well dried, we arrange them on a serving platter.
