Cheese pie

Cheesecake and raisins is one of my favorite cakes, which my mother used to make for me almost weekly when I was a child. It also alternates with apple pie and Snow White cake. This pie is easy to make and quick to prepare, and if you use commercial pie sheets it is really a game to make this pie.

  • 100 g raisins;
  • 1 kg of sweet cottage cheese;
  • 2 tablespoons rum essence;
  • 60 g flour;
  • grated peel of a lemon (and, optionally, of an orange);
  • 12 sachets of vanilla sugar (100 g);
  • 1 egg yolk (for spreading the pie sheet),
  • commercial pie dough or pie sheets.

Servings: 12

Preparation time: less than 90 minutes

RECIPE PREPARATION Cheesecake:

Preparation of pie with cottage cheese and raisins: First prepare the dough for sheets (preparation of pie dough), then start preparing the filling. It is preferable to have the dough prepared in the evening and leave it in the fridge overnight.

Start preparing the ingredients for the filling.

Put the raisins in a bowl, an hour before you start the pie, and pour the rum essence over them. Stir, from time to time, to soak the rum essence in raisins.

Put the sugar over the cheese and mix until the composition is homogeneous. Add the lemon and orange peel. Pour the flour, little by little, stirring constantly until it is homogenous with the cheese. Finally, add the raisins and mix a little more, after which you can fill the pie.

Take the dough out of the fridge (if you are not using commercial sheets) and cut it in half. Spread a sheet as large as a large tray, place a baking sheet on the bottom of the tray and place the sheet of dough. It is preferable to stretch it a little larger than the tray, then cut the additional edges.

Add the cream cheese and spread it evenly over the entire surface of the sheet. Spread the second sheet of dough and put it in the pan. Cut the edges that protrude from the surface of the tray, then grease the sheet with the egg yolk all over the surface.

Then place the tray in the preheated oven at 180 degrees and let it bake for 40 minutes.

When the pie is golden brown on the surface you can take it out of the oven. Let it cool. After it has cooled, remove the pie from the pan, cut it into slices, in any shape you want, and sprinkle it with powdered sugar on top. You can serve it both hot and cold.


What cheese and pie sheets do we use at burek & # 8211 dobrogeana pie?

  • The pie sheets are thin (not puff pastry!) And are also found abroad under the name filo (pyhllo) or yufka.
  • Cow's cheese is the so-called & # 8222sweet & # 8221, as for cheese pancakes. Check the percentage of fat written on the package (to be as fat as possible, not dietary because it is lumpy). It is best to buy it from the market from local producers and taste it on the spot.
  • Burek salted cheese can be bellows or telemea (cow or sheep). The telemeau should be well drained and then finely grated.

If you live abroad and do not know what cheese to buy or if you prefer to make your own cottage cheese at home you can follow this recipe.

Do not be afraid of the quantities you see in the pictures below because I had to bake several burek trays and I prepared the composition in huge bowls. In the recipe below I give you the quantities for a large oven tray (42 x 33 cm).


SALTED CHEESE PIE

With just a few ingredients and a little patience, you can prepare the best salted cheese pie at home.

ingredients:

  • a packet of fine pie sheets
  • 350 gr. cow telemea
  • 4 eggs
  • 500 gr. sour cream
  • 150 gr. butter

The first step in today's preparation involves greasing a heat-resistant tray with a generous layer of butter.

It is very important to remove the pie sheets no more than half an hour beforehand from the freezer so that they do not have time to dry. They are very delicate and thus we avoid gluing them, which will not allow us to grease them individually.

I grate the cheese on the large grater and then I mix it with 200 grams of sour cream and an egg.

I start to grease a sheet of pie with melted butter, adding 4 sheets on top of each other, spreading a quarter of the cream cheese composition all over the surface and forming a roll that will fit into my tray along the way. It must be worked quite quickly, eventually we can have at hand a wet towel to cover the unused sheets until installation.

I estimated that I would form 4 rolls from the whole package of sheets and the cheese mixture obtained.

I prick them with a fork from place to place, and add a final touch of butter on top.

In a separate bowl beat the remaining 3 eggs with 300 gr. of sour cream then turn them over the cheese rolls to cover them everywhere.

The oven is already heated to 190 ° and let the pie bake for about an hour and a half.

Towards the end I reduce the temperature a little more to make sure that it penetrates enough and does not burn underneath.

The pie grew very nicely. The crust on top is amazing and has a layer of cheese enough for my taste.


Cheese and spinach pie, a weight loss recipe

I really like the cheese and spinach pie! So much so that I came up with an easy recipe or even a weight loss recipe. I think it's important to pay attention to what we eat and maintain our weight, or even look for a weight loss recipe that is healthy and balanced. So, here is my dietary version of cheese and spinach pie.

Ingredient:
2 sheets of pie.
10 organic eggs.
200 g goat cheese. It can be made with any kind of Telemea cheese, including the light version.
a 400 g bag of spinach, thawed and squeezed.

Preparation time: 5 minutes.
Baking time: 45 minutes.
In a bowl, grind the Telemea cheese with a fork and mix the 10 eggs. Add pepper and caramelized onions to taste.

In the ceramic pie dish, place the first thin sheet of pie dough, folded in half. Place the thawed spinach in an even layer. Then pour the mixture of eggs and cheese. Cover with the second sheet of pie. Bake in the oven at 150 degrees until the composition is bound. When the egg is baked and the composition is bound, the pie is firm, especially in the center.

It is an easy recipe, ideal for slimming belts. It is also good for the periods when you want to stay. It can be consumed in hyperprotein diets. It has a low fat content if we opt for light cheese. In the situation where we want a recipe for maintenance, it is good to use normal cheese. It is prepared quickly and can be eaten both for breakfast and as a main meal, along with a salad.

Khachapuri & # 8211 Georgian cheese pie & # 8211 Traditional recipe

Khachapuri is a traditional Georgian pie filled with cheese and egg. In fact, it is a bread dough with olive oil, which is stretched rectangular or round, the cheese composition is placed in the middle, the edges are raised and a twist is made at both ends so that the composition does not flow. It can be made with other ingredients such as meat, vegetables, etc., the thought leading me to the famous Turkish pide. They are consistent and filling, being extraordinary for breakfast but also for a snack

Ingredients

For the dough

  • 500 g white flour
  • 2 tablespoons olive oil
  • 20 g of yeast
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 300-350 ml water
  • 1 yolk

For the filling

  • 200 g mozzarella
  • 200 g feta
  • 150 g ricotta
  • 2 eggs
  • A few strands of green onion tails for decoration

Step by step method

We start, of course, with the dough. Heat the water slightly (it should not burn on the finger, if you try it). Mix the yeast with the salt and sugar, add some of the hot water and leave it for 10-15 minutes to release the carbon dioxide.

In a large bowl, combine the flour with the olive oil. Add the yeast mixture and knead for a few minutes, until the dough becomes elastic and homogeneous. Cover the bowl with cling film and leave it there for 30 minutes or as long as it needs to double.

Grate the mozzarella on a large grater, mash the feta cheese and place them in a bowl with the ricotta and eggs. Homogenize the composition and set it aside.

Divide the leavened dough into 8 equal pieces or if you want them smaller than you want, the idea is to be equal. Spread the dough into rectangular pieces and divide the cheese evenly on the dough, spread it lightly and gather the side edges inwards, twist the ends and place them in trays lined with baking paper.

We take them out and let them temper in the tray in which they were baked. Sprinkle slices of green onions and they are only good to serve with a yogurt or a glass of whipped milk. Simple isn't it? Good job and good appetite!
