They are very good stuffed with a porcini mushroom sauce ..
But I have no idea how they can be done. Maybe they sell them ready-made.

Take a piece of parchment paper, put a spoonful of Parmesan in it, then spread it out with the spoon forming a circle. Put in a hot oven and when it is well melted and bubbly (it takes very little) you take it out and tip over a bowl. When it is cold you detach the basket from the shape and fill it as you wish.
When you have done a little practice with the quantity of Parmesan and with the necessary time you can also make them with a pan which is much faster.

To fill them you can try this:
- bottom salad, pink sauce, shrimp
- rocket on the bottom, bresaola and lemon wedge

On the web I have seen many and finally I decided to prepare the Parmesan Cheese Baskets, that is to say, parmesan waffles ideal to serve as single-portion containers particularly suitable for imaginative salads and risottos. I find them perfect scenographic for aperitifs or buffets.

To shape the baskets or parmesan wafers, you need a simple glass or cup, according to the size you want to obtain, you can adjust the quantity of Parmesan cheese and the shape of the container on which they will be placed once the cheese is melted.

To make the filled parmesan baskets you must first heat a non-stick pan on the stove. When this is hot, put a little parmesan inside (use the amount necessary to line the bottom of the pan).

When the cheese is solidifying, turn it with the help of a non-stick stirrer and leave it for a few more seconds. Remove it from the heat and place it on a small inverted bowl.

At this point try to give it the shape of the basket. Proceed like this until the Parmesan is used up. At the end of the operation, let the baskets cool. In the meantime, make the filling: take a bowl, put the Ricotta Santa Lucia, salt, pepper and chopped Galbacotto ham in it.

Mix everything together. Now unmold the baskets and fill them with the cream made. Serve your stuffed parmesan baskets at room temperature.

In the pan

To prepare the stuffed parmesan baskets, first take care of the rocket.

Wash it and season it with a little extra virgin olive oil, salt and pepper. If you don't like whole leaves, you can also chop them by hand or knife.

Cut the speck into cubes and wash the cherry tomatoes.

Cut out the parchment paper, you will need 4 squares 15 & # 21515 cm.

Heat the pan, place the square of parchment paper in the center of the pan. Put 30 g of grated Parmesan cheese in the center of the square.

Using a spoon, form a circle of 10 cm in diameter, distributing the cheese evenly.

In a few seconds the cheese will begin to melt: when the edges begin to brown, take parchment paper and cheese and spread it on the bottom of an overturned glass, shape with your hands to shape the basket.

Let it cool completely before removing the parchment paper.

Proceed like this until all the baskets are formed.

Fill the parmesan baskets with the rocket, the speck cubes and top with a cherry tomato.

In the oven

You can also bake baskets of Parmesan in the oven, it is better to do them this way only if you have a hot oven otherwise it is more hasty and cheaper to cook them in a pan.

Arrange on a baking sheet covered with parchment paper, 4 heaps of 30 g of cheese, well spaced from each other.

Using a spoon, form 4 circles of 10 cm in diameter, distributing the cheese evenly.

Bake for 2-3 minutes at 180 ° C or until the edges begin to brown.

Remove from the oven, cut the parchment paper and spread the parmesan or parmesan wafers on the bottom of overturned glasses, shape with your hands to shape the baskets.

If you think that cutting the parchment paper after cooking can take a long time, then cut it into squares of 15 & # 21515 cm and then place the cheese on them.

Baskets can be prepared in advance and filled at the last minute.

You can fill your parmesan baskets with whatever you like best, even the most disparate mousses are fine.

You can also make parmesan baskets by changing the cheese.

In addition to parmesan or parmesan, you can make a mix of cheeses and add a little pecorino, to your taste.
