Salmon risotto

In order for the risotto to turn out well, it is important to use the specific rice, with the round grain. Usually I use 2 handfuls of rice for each person. Put the finely chopped onion in a saucepan and heat it with olive oil, until it becomes soft and translucent. It should not be fried until it turns color, just soften over low heat. Then add the rice and mix for about 2 minutes. Pour the white wine and let it drop, stirring constantly. Then pour a pinch of fish soup, gradually, stirring constantly. When the water drops, add the soup again, until it boils, boil the rice grain and become creamy. I made the soup from boiling water mixed with fish knorr concentrate.

Cut the salmon into cubes and fry it in butter or vegetable margarine for cooking. Lightly brown it on all sides (not too much so that it does not become dry). Let's put it aside.

When the rice is almost cooked, add the fish cubes, with the sauce left in the pan and mix carefully. At the end, when we turn off the heat, add finely chopped green parsley. And serve with grated Parmesan cheese on top.

1. Pizza with salmon

Although fish pizza is not a very common dish, you will love this recipe. Also, don't forget that baked goods are the healthiest because they are not burnt or full of fat.

Ingredients

  • 3 tablespoons butter (60 g)
  • 1 tablespoon yeast (15 g)
  • 3 eggs
  • 3 cups wheat flour (360 g)
  • 1 tablespoon salt (15 g)
  • 1/2 cup milk (125 ml)
  • 3 tablespoons tomato juice (45 ml)
  • 1 1/4 cups mozzarella (240 g)
  • 240 g salmon cut into pieces
  • 1 tablespoon oregano (15 g)

Method of preparation

  • The first thing you need to do is prepare the pizza dough. To do this, mix the butter, yeast, eggs, flour and salt in a medium-sized bowl.
  • Then, add the milk and knead everything until it becomes the consistency of a dough. Form a ball and sprinkle some flour on it. Let it sit aside for 30 minutes.
  • After this time has elapsed, use a twister to roll out the dough in the shape of a pizza top. Also take into account the size of the tray you are going to use.
  • Put the tablespoons of tomato juice and a little mozzarella on the dough.
  • Then, add the salmon pieces to the pizza, the rest of the mozzarella and sprinkle over the oregano.
  • Preheat the oven to 190 ° C (374 ° F) and bake the pizza for 10 minutes. Let it cool and serve. Good appetite!

2. Sweet and sour baked salmon

Do you generally prefer to serve red meat? There is nothing wrong with doing this, because red meat provides you with important amounts of protein and minerals essential for the body. But from time to time it is important to vary your menu. These baked salmon recipes are great for a balanced diet.

Ingredients

  • 2 salmon fillets (about 400 g)
  • 1 onion
  • 1 carrot
  • 2 tablespoons brown sugar (30 g)
  • 1 cup water (250 ml)
  • 1 tablespoon cornstarch (15 g)
  • 2 tablespoons tomato juice (30 ml)
  • 1 tablespoon soy sauce (15 ml)
  • 1 tablespoon salt (15 g)
  • 1/2 tablespoon pepper (8 g)
  • 1 tablespoon extra virgin olive oil (15 ml)

Method of preparation

  • First, put the olive oil in a bowl and cut the onion and julienne carrot.
  • Then, put the salmon in the bowl and add the vegetables, salt and pepper. Put the bowl in the fridge for 20 minutes.
  • Prepare the sweet and sour sauce that will accompany the salmon. In a pan, heat the water together with the soy sauce, cornstarch, sugar and tomato juice. Stir until the composition thickens.
  • At this point, take the bowl of salmon out of the fridge, transfer the fish to a tray, pour the sauce over it and cover it with aluminum foil.
  • Bake in the oven at 190 ° C (374 ° F) for 15 minutes, then let it cool slightly and serve.

3. Appetizer with salmon

The best thing about this salmon recipe is its versatility: you can serve it as an appetizer or as a main course. It is much easier to prepare than you imagine.

Ingredients

  • 3 cups whole wheat flour (360 g)
  • 1/2 cup butter (100 g)
  • 2 tablespoons salt (30 g)
  • 1/2 cup cold water (125 ml)
  • 4 eggs
  • 2 tablespoons sunflower oil (30 ml)
  • 2 cloves of garlic
  • 1/2 cup rice (100 g)
  • 2 onions (200 g)
  • 1 cup mushrooms (120 g)
  • 240 g of salmon
  • 1 tablespoon pepper (15 g)

Method of preparation

  • First, mix in a large bowl the flour, an egg, butter and a tablespoon of salt. Then add water and knead well until a lump-free dough forms. Put the dough in the fridge.
  • Cook the rice with the sunflower oil, a little water and the rest of the salt.
  • After that, take the dough out of the fridge, spread out a sheet and cut it in half.
  • Add the rice and cover everything with a plastic wrap until you prepare the rest of the filling.
  • Then, cut onions, salmon, garlic cloves and mushrooms into small pieces and fry them in a pan with a drop of sunflower oil.
  • Beat the remaining eggs in a bowl and add the sautéed ingredients and pepper. Stir well.
  • Pour the mixture over the rice and cover everything with the remaining part of the dough. Sprinkle on top with a drop of oil and put everything in the oven at 180 ° C (176 ° F) for 15 minutes.
  • Allow the preparation to cool and serve.

Smoked salmon risotto

Fry the washed and chopped leek with the garlic and 40 g of butter, over low heat for about 10 minutes, until the leek begins to melt (use a non-stick pan or wok).

Add the white wine, stir and allow to evaporate completely.

Wet with a ladle of broth and pour in the rest several times, stirring regularly until the rice is cooked (the rice should be melting and slightly firm at the same time). Salt during cooking if necessary (the broth is already salted I do not recommend it).

At the end of cooking, add the fresh cream or cold butter as well as the parmesan, stirring gently.

Just before serving add the pepper, salmon strips, dill and lemon zest (the salmon shouldn't cook!). Serve immediately as the risotto is not very well warmed.

680 grams of shrimp

4 steps to prepare shrimp risotto:

1. Heat the butter in a large skillet over medium-high heat. Add the shrimp, in a single layer, and leave for about 3 minutes, on both sides, until they are opaque in the middle. Remove on a chopping board and cut coarsely. They step aside.

2. Return the pan to the heat and add the onion and garlic. Let it cook for 2-3 minutes or until the onion becomes translucent, stirring frequently. Reduce fire to medium-low. Add the rice to the pan and stir for a few minutes, being careful not to burn it. Pour in the wine and mix gently, allowing the rice to absorb the liquid.

3. After the wine is absorbed, add the hot soup juice, one cup at a time, letting the rice cook and absorb the liquid each time. Stir occasionally and season with salt and freshly ground black pepper. After 4 cups of soup juice have been absorbed, taste the rice. If the rice is not cooked enough, add more soup and boil the composition.

4. Grate the peel of a lemon and squeeze the juice, adding both towards the end of the cooking process. Mix the cream, basil and serve with grated Parmesan cheese on top.

Baked salmon

The technique to get a soft and juicy baked salmon.

I don't know if you've ever tasted it like that, but for me the best salmon is the raw one. So for baked salmon I looked for a recipe that would keep everything that has the best raw salmon (soft and creamy texture, color, taste of sea water) and at the same time be cooked. When I cooked the salmon at higher temperatures, the color turned pale pink and the taste was totally different from that of raw salmon. It worked, but I wasn't ecstatic about the result. That's why salmon isn't even one of my favorite fish when it comes to cooking them in the oven.

I found the solution using a very low temperature, but which involves a longer baking time. But it's worth the wait. Baked salmon turns out absolutely perfect.

The recipe calls for a cut of the salmon to obtain a uniform thickness of the fillets. I hadn't done this before, even if those edges came out dry so as not to waste, but since I discovered the wonderful salmon meatballs, this is no longer a problem. Those edges are ideal for making some meatballs.

Baked salmon can be served with steamed vegetables (especially broccoli), with dill and pea sauce or with a refreshing salad.


Risotto with smoked salmon.

Salmon risotto is a fine dish, worthy of a banquet, a special event or a moment of pampering.

  • 160 gr rice for risotto
  • 100 gr smoked salmon
  • 30 gr of butter
  • 60 ml cooking cream
  • 4 green onions (or shallots)
  • 50 ml dry white wine
  • 1 liter vegetable soup (made from a cube)
  • 4 tablespoons olive oil
  • a spoonful of Philadelphia cheese (natural or salmon)
  • salt and pepper
  1. Prepare all the ingredients.
  2. Make a soup from a liter of water and a vegetable cube, or one from a liter of water and a few vegetables: leeks, carrots, celery, onions, parsley, in varying amounts. Keep the soup warm.
  3. Finely chop the white parts of the green onion and the smoked salmon into small cubes.
  4. Put the onion to harden in a little olive oil. When it has softened, add the salmon pieces and let them harden until they become whitish.
  5. Pour the wine and let the alcohol evaporate. Add the cooking cream and bring to a boil, to penetrate the taste. Pepper, but don't salt the salmon is quite salty and you risk spoiling the preparation. Set the pan aside.
  6. In another pan, heat the butter and a drizzle of oil. When they are hot, pour in the rice and, stirring constantly, let it harden until it becomes translucent. I can tell by the sound when it's ready, you can hear the little cracking of the rice grain, kind of like the sound that popcorn makes when it expands.
  7. Add a pinch of hot soup, and from this moment count the cooking time of the rice for 20 minutes.
  8. As the soup is absorbed by the rice grains add the hot soup, stirring constantly.
  9. After 10 minutes, add the salmon cream to the risotto and continue cooking. Taste and season if necessary.
  10. At the end, turn off the heat and set the pan aside. Add the Philadelphia cheese and stir vigorously. You can replace Philadelphia cheese with 50 g of semi-hard cheese, which disintegrates when heated.
  11. At the end, the risotto should be lightly cooked al dente and on the wave, that is, it should not be scattered, and the consistency of the whole preparation should be soft, not stiff when you hit the rice pan to make a wave-like motion above it.
  12. Assemble the dish: place the appropriate portion in the center of each plate. Tap the bottom of the plate and the risotto will sit on its own in an even layer. Garnish with slices of smoked salmon, finely chopped green onions or a few arugula leaves.

  • Add to a pan 50 g Knorr Primerba Onions, rice, white wine and boil the entire composition until the alcohol evaporates.
  • Mix Knorr Fond fish with hot water and gradually add half of the soup obtained over the rice until it is boiled.

The cooking time depends on the size of the salmon and its thickness.

One-portion fillets (like the ones I used) are made in about 15 minutes, at 200 degrees C.

If you want to cook a piece of whole fillet then you have to leave it for about 25 minutes.
