We wash the donuts, clean them of seeds and put them in the mincer. We take the carrot, wash it, clean it and grate it. We clean the onion and put it through the mincer.
We put the oil in the pot and when we see that it is hot we add the onion and heat it a little. Then add the donuts and carrots and let them boil. Meanwhile, wash the rice and boil it and drain it. We add it about halfway through the cooking time in the zacusca. Let it boil until it thickens and add salt to taste.
Wash the jars and add hot zacusca in them. We screw them well and put them one night with the lids down so that they don't boil and we cover them with a blanket.
