Clover with limoncello

Clover with limoncello

The oranges are squeezed from their juice ... in a bowl of the right size where we are going to assemble the dessert.

Imoncello is added over the orange juice, checking the balance between sweetness and alcohol ...

The bottom of the vessel is covered with a layer of biscuits ...

In a separate bowl put the mascarpone, powdered sugar, bourbon sugar and milk ...

Mix for a few seconds to blend everything ...

Grate the lemon peel on top, then add the juice of half a lemon ... mix well ...

The cream is spread over the biscuits ... which in the meantime have absorbed all the liquid from the bottom of the bowl ...

Add raspberries over the cream ... and top with plenty of dark chocolate!

Put the dish in the fridge ...

Each teaspoon left behind leaves an exclamation point!

The classic English dessert, trifle can be prepared in individual portions or in a larger bowl. This clover recipe also contains cherry liqueur, but if you want to serve it to children, you can give up liqueur.

Prepare the pandispan according to the instructions in the recipe, or buy a pandispan top. Prepare the English cream, I recommend the one made at home to the detriment of the one you bought.

Place on the bottom of the bowl in which you choose to prepare the dessert, the chopped pandispan top or cut into slices. Wash the cherries and remove the seeds, and place them evenly on the counter until it covers. Press well with the fork to get the juice out of them, then sprinkle them with cherry liqueur. Add the custard, also in a generous layer, then finish with a layer of freshly whipped cream, which you can arrange with a posh.

The English cherry clover was served cold and kept in the fridge until ready to serve. Garnish with toasted almonds and fresh fruit.

Trifle with lemon curd, strawberry and yogurt

I start the series of recipes published on the blog www.adihadean.ro with this delicious dessert, easy to make and very refreshing, suitable for hot days, especially if you do not love ice cream (which is not impossible, I know a few people).

The dessert is mounted both in a large cup or bowl (perfect for parties) and in small glasses, individual portions.

It's a cold-prepared dessert from what we have around the house. Combinations can vary depending on your favorite fruit or cream. As I had an egg white cake, with lemon and poppy seeds, which was not eaten, I thought of finding a utility for it and I used it as a starting point for this recipe. Of course you don't need to make a cake for this recipe, you can use any leftover countertop or simply biscuits bought.

I also had a jar of Greek yogurt lying in the fridge and I said it was refreshing and light, an alternative for those who don't like ice cream.

For the base you need a vanilla top / cake or 20 biscuits. Prepare a syrup of 250 ml of water, 120 g of sugar and vanilla essence and let it cool.

For lemon curd we need: 2 eggs, peel and juice from two organic lemons, 100 g sugar and 50 g butter that we put in a saucepan. Put the pan on low heat and stir continuously until it thickens and acquires a beautiful color. Let the sauce cool until we prepare the yogurt cream.

For the cream we need 400 g of Greek yogurt (10% fat), 180 g of sugar, 1 tablespoon of lemon curd, 400 ml of whipped cream. Mix the yogurt with the sugar and yogurt sauce until the sugar dissolves, then incorporate the whipped cream. Put the cream in the fridge for 10 minutes.

In addition we need 300-400 g of strawberries or raspberries, it fits just as well in this combination and 150 ml of whipped cream.

In a large bowl / cup / smaller glasses (about 10) place a layer of cakes / biscuits, syrup, put a few tablespoons of cream, fresh strawberries and lemon sauce, then layers of cake / syrup syrup, strawberries and lemon sauce, cream, lemon sauce and cream (150 ml whipped cream with a tablespoon of powdered sugar).

I decorated with strawberries and meringues, made from a beaten egg white with 70 g sugar and baked for 45 minutes on low heat.

Trifle with limoncello - Recipes

Tea gained popularity and impressive consumption figures a few hundred years ago, but growing interest in beverages has led to the flowering of a new tea scene, taking over the best teas, traditions and rituals from all over the world and transforming them. , adapting them to everyday life. The culture of tea mixed in the culture of the bar gives birth to a new term, which has not yet found its acceptance in the DEX of the Romanian language: Mixology of tea. The "mixologists" saw tea as an authentic ingredient for preparing cocktails. This explains the topicality of the English term "tea tennis" and the habit of using tea-based infusions as a basis for reinventing cocktails - usually formed in well-ranked places, but which can be easily learned at home. And, although we are talking about alcoholic beverages, tea teas have also been successful in replacing ingredients & # 8211 such as juices & # 8211 that are high in sugar.

Jasmine Gback Tea Vodka

Votca is an alcoholic drink without too much taste, and, because it is a very good solvent, we propose the infusion of a fragrant tea in a vodka content. For this I chose green tea with natural jasmine scent: China Jasmine.

Depending on the amount you want to prepare, use 100 ml of vodka for each teaspoon of loose tea.

Pour the vodka and then the tea leaves into a glass jar, put a lid on and gently turn the container to one side and the other, one after the other, to stimulate the infusion. Give the mixture between 30 minutes and 2 hours to infuse - depending on the desired result. Then strain the contents into another container that you can put in the fridge.

The next step - preparing the cocktail

granulated brown sugar for decoration

120 ml of China Jasmine infused in vodka

80 ml of concentrated shock syrup

60 ml of freshly squeezed lemon juice

Sprinkle the brown sugar on a flat plate, moisten the edge of a glassed glass, especially for the cocktail, with a slice of lemon, then turn the glass over and place it over the sugar. Pour the other ingredients into a shaker or jar with a lid, mix well for 30 seconds, then strain the contents into the glass decorated with sugar.

The same recipe can be made with bergamot-scented black tea, such as Earl Gray black tea.

Rooibooze MarTeaNi

Enhances the sweetness of rooibos with a sweet vermouth, keeping the classic, signature note of juniper in the composition.

Put the rooibos needles in a kettle, add the hot water and let them infuse for 5 minutes. Strain the infusion into a container and wait until it cools. Optionally, you can then place the infusion in the refrigerator.

250 ml of cold rooibos infusion

Add all the ingredients, except the lime peel in a shaker or jar with a lid and mix vigorously for 30 seconds. Strain the contents into cocktail glasses with a foot, which you can decorate with grated lime peel.

Lime Ginger Margarita

The more tonic variant of the famous cocktail, under the influence of the astringency of green tea with lime and a piece of ginger.

Put Lime Ginger Organic tea in a teapot, add hot water and let them infuse for 3 minutes. Strain the infusion into a container and wait until it cools. Optionally, you can then place the infusion in the refrigerator.

granulated brown sugar for decoration

Sprinkle the brown sugar on a flat plate, moisten the edge of a glass with a slice of lemon, then turn the glass over and place it over the sugar. Pour into a shaker or jar with a lid 100 ml of infusion of green tea and other ingredients, mix well for 30 seconds, then strain the contents into the glass with a foot, garnished with sugar. Serve cold.

Cherry Trifle Vodka

An aromatic, sweet-sour cocktail, based on cherry fruit infusion.

Put Cherry Trifle tea in a teapot and pour hot water and wait for it to infuse for 10 minutes. Then strain the infusion into a container and cool.

Pour all the ingredients, except the cherries, into a shaker and mix well for 30 seconds. Strain the contents into two long glasses and place one cherry in each glass. Serve cold.

Bourbon Peach Dream

A "tea tini" in which the sweetness of bourbon is complemented by the infusion of fruits, based on peaches.

Put the Peach Dream tea in a teapot, pour hot water and let it infuse for 10 minutes. Then wait for it to cool, then put it in the fridge.

Beat the mint leaves between your palms to release more volatile oils, then put all the ingredients in a shaker and mix well for 30 seconds. Strain the contents into two long glasses. Serve cold.

Lemon Yerbacello

Infusion of Yerba Maté & # 8211 an energizing South American herbal tea - in a sweet combination with limoncello liqueur.

Put the Yerba Maté plant in a kettle, add the hot water and let them infuse for 5 minutes. Strain the infusion into a container and wait until it cools. Optionally, you can then place the infusion in the refrigerator.

Add the limoncello liqueur, infusion and ice cubes to a shaker and stir vigorously for 30 seconds. Strain the contents into cocktail glasses with a foot, which you can decorate with grated lime peel.

Pu`Erh Chocolate

A creamy drink based on rum, chocolate liqueur and fermented tea. Pu`Erh tea and chocolate have concentrated flavors and are often associated with meals or preparations.

Put Pu`Erh tea in a teapot, add hot water and let them infuse for 2 minutes. Strain the infusion into a container and wait until it cools. Optionally, you can then place the infusion in the refrigerator.

4 tablespoons chocolate liqueur

Add all the ingredients, except the lime peel, in a shaker or in a jar with a lid and mix vigorously for 30 seconds. Strain the contents into long cocktail glasses. Serve cold.

The island of Capri or Sardinia

A stone's throw or a sail away from the Italian coast, we find the island of Capri, with small white houses perched on cliffs and artisans who make custom sandals, under your eyes, near the port. Before, towards the mountain, we find lemons almost everywhere. Unlike the center of Spain, where oranges grow on the street and live their lives there and only there, the lemons from Capri fulfill their destiny in the traditional rotary and wooden presses, from which Limoncello results.

Limoncello sits before and after dinner, like most Italians who love buffalo cheese and Tuscan red wine. The origin of the liqueur is unknown, and the traditions are divided into various camps: each to tell the story and to peel the lemon in their favor. That is why some start from Capri, others from Sorento, and others, even from Sardinia and southern Sicily.

The digestive virtues of the drink raised Limoncello to the same heights with rivals as Amareto or Bitter. Many customers shout through the restaurant: “a limoncello, please! And they don't seem at all surprised to see how the glass of liqueur "rises" on the table. But, be it between us, who needs a digestive liqueur for a "caprese" salad or squid in Gorgonzola cheese sauce? But you can also order a Pizza Margherita at the Antica Pizzeria Port’Alba restaurant, if you’re in Naples. Don't forget to try Limoncello anyway!

Place the biscuits in a large glass bowl so that there is a layer on the top edge. You can also make a pandispan instead of biscuits.

Prepare the English cream: put the milk on the fire to heat it with powdered sugar and cinnamon. Do not leave until it warms up well, do not set it on fire. Separate the yolks from the egg whites and mix with the sugar. Then pour the warm milk, stirring until it becomes a liquid cream. Put it in a steam bath and mix until it acquires the consistency of a thick cream.

Cherry sauce: The fruits together with the lemon juice, sugar and vanilla are put together in a pan over low heat, until the sugar dissolves. Then turn on the heat a little harder, add the starch, stirring constantly, until we have a thick sauce, but the fruit did not crush, about 3 minutes. Leave to cool.

For decoration fear cream: mix the butter (cold) together with the sugar, vanilla essence and liquid cream at low to medium speed, on a steam bath. Bring to the boil, stir for 5-6 minutes, until a creamy sauce is obtained. Leave to cool, then mix before use.

Pour the warm fruit sauce over the biscuits, put it in the fridge until it hardens. Then add the custard and at the end decorate with whipped cream. It is an easy and delicious dessert!

Christmas trifle is served from the fridge. It can be prepared in a large dish or individual dishes.

Clafoutis with rhubarb with limoncello

INGREDIENTS

  • A bunch of rhubarb (eye a metric, depending on how big the tray you want to make it in)
  • 100 ml limoncello
  • 200 ml of milk
  • 50 g brown sugar
  • 3 eggs
  • 85 g flour
  • 1/2 vanilla pod
  • 1 pinch of salt
  • powdered sugar (optional)

Rhubarb stalks are cleaned and washed and left in a tray spread in limoncello for 1-2 hours.

Preheat the oven to 180 degrees.

Beat the eggs with the milk, sugar, flour, vanilla and salt and add the limoncello in which the rhubarb was. Pour into the pan and bake for about 5 minutes to set a little. Place the rhubarb stem next to the stem on top and put back in the oven for about 30 minutes. Until it turns golden.

It can be served hot or cold. With or without powdered sugar sprinkled on top. It can even be served hot, with a cup of ice cream (vanilla, strawberries, pistachios, etc.) on top.

Individual Lemon Raspberry Trifles

measurements are only given as a guide for about 12 miniature trifles

  • a few pieces of Lemon Cake (this one is perfect-but don & # 8217t use the icing in the trifles)
  • 1 cup fresh raspberries
  • 1 tbsp sugar
  • 1 tsp fresh lemon juice
  • 1/2 cup whipping cream, whipped (real cream, not Cool Whip or the spray stuff in a can) with no added sugar
  • optional: some raspberry or lemon liqueur, like Limoncello

Break up the slices of lemon cake into small pieces.

Set aside as many whole raspberries as the number of trifles you are making, for the top.

Roughly crush the remaining fresh raspberries in a bowl and add the sugar and lemon juice. Set aside for 10 minutes, and it will develop some lovely juice. (Note, the juice will color the cake pink, if you want to see the different colored layers, don't use too much juice.)

Place some pieces of cake in the bottom of the glasses, and drizzle with liqueur if using. Next, top with some crushed raspberries.

Now, dollop or pipe some whipped cream for the next layer. I recommend piping as it keeps the glasses more clean and gives the dessert a more professional look.

Repeat with more cake, liqueur, raspberries and end with cream. Finally, top with a fresh raspberry. Refrigerate for at least an hour or so before serving.

Incidentally, these are as perfect for a garden party in spring or summer & # 8230

as they are for a cocktail party at Christmastime or the holidays!
