This classic Puerto Rican stew is a great alternative to the boring crab meat recipes you may be used to. Salmorejo (Stewed Crab and Tomatoes with Rice) is ready in less than thirty minutes so it’s a perfect way to kick off a new week.

. The pork chops for these Pan Seared Pork Chops with Garlic and Greens get their flavor from a brine. When I make it, I brine the pork chops the overnight, setting the pork into the brine right before I turn in for the night. When I’m ready for dinner, I only need 20 minutes and they’re done. Quinoa, mashed cauliflower, or potatoes are a great accompaniment for this.

I love a good plate of bruschetta, so when I found this Cheesy Bruschetta Chicken Cutlet recipe AND saw that it was ready—start to finish—in 15 minutes, I was all over it. I serve it over pasta for dinner, but have been known to send leftovers to work with the hubby in the form of a sandwich!

Now, total transparency, this recipe I’m including because I was hesitant to ever try it. Chorizo and sweet potatoes are not my favorite foods, but these Chorizo Stuffed Sweet Potatoes drastically—and I mean drastically—changed my mind. It just goes to show you, even those of us who cook for a living can have hang-ups when it comes to food!

For a special treat this week, I’m making some rice pudding! It’s a comforting childhood classic, made with white rice, whole milk, brown sugar, and spices. So good!
