As a home cook, a food lover, and the editor of a recipe website, one of the most heartwarming things to come from the current lock-down situation has been an absolute surge in home cooking. Right now, everyone and their mother is cooking at home whether they particularly want to or not!

It has been amazing — and occasionally surprising — to see what you all have been cooking the past few weeks. Banana bread is a given (I’ve already made three loaves myself!), but you’ve also been cooking up pots of shrimp étouffée, dishes of lasagna, and batches of homemade yogurt.

"This turned out AMAZING!! I had leftover corn tortillas that I definitely did not want to goto waste. So I made chilaquiles this morning and am absolutely thrilled with how it turned out. I threw in a bit of carne asada, shredded cheddar (didn’t have Mexican cheese), and sprinkled some diced onions and cilantro on it with 2 fried eggs and salsa verde. Oh my goodness. "I needed a French toast recipe as I had a slightly stale country white sourdough that needed to be used today. Made without cinnamon (glaring omission but having to make do with a limited pantry), but added the fresh orange zest and dry curaçao. So delicious! It was the first time making French toast with artisan bread so next time, I will let the pieces soak a bit longer before adding to the pan. The orange flavor was absolutely lovely and we didn’t miss the cinnamon at all." -Twinkle

"I made these last night. Outstanding. I filled two with my homemade chili and loved it.
I made them on a rack in my convection oven.
To me the key was to put the skins back in the oven on the higher temp on a rack. Helped really crisp with out drying them out." -Chas
