Peel the potatoes and carrots and grate them. First we put the potatoes on the grater to drain them, then the carrots.
Finely chop the onion and add it over the vegetables.
Separately, beat the eggs together with the larch, thyme, salt and pepper.
Put the eggs over the vegetables and mix. Over the baking paper we will spread the vegetable mixture in a thin layer (I used the oven tray). Lightly flatten and put the tray in the preheated oven for approx. 25-30 min. Turn the tray over on a larger support so that you can peel the baking paper off the potatoes more easily. We cut the potatoes into 12 pieces.
Grease 6 pieces of tomato paste mixed with hot pepper paste, put a slice or two of fillet muscle and cover each piece with its pair. Put the mozzarella on top and leave the sandwiches in the oven for 20-25 minutes or until the cheese melts.
Serve both hot and cold!
