Bruschettas with tomatoes, corn and cabanos

100 g green olives
3-4 tablespoons oil
salt to taste

Preparation time: 40 minutes Baking time: 30 minutes

Method of preparation:
First we prepare the chicken. I chose to use chicken legs, and their number depends on how many people are at the table, but you can also use a chicken cut into pieces.
The chicken legs are washed and wiped by dabbing with paper towels. In a pan with a little oil, apply the crust to the thighs on all sides. If necessary, add more oil.

When the thighs have browned, take them out on a plate and cover them with aluminum foil.
Put a little butter in the remaining oil to remove the burns and strain it. Put the clean oil back in the pan and cut the julienned red onion until it becomes translucent.
Add 200-300 ml of diced tomatoes from the can, with its own juice. Season with salt and pepper to taste.


Turkish feet

In a bowl sift the flour and salt and pour in the middle warm water mixed with sugar and yeast. Mix the composition until you can no longer see the flour, then pour the olive oil and knead for about 10 minutes or until you have a very well bound dough.

Then, put the dough in another bowl, greased with a little olive oil, cover it with cling film and leave it to rise in a warm place for at least 2 hours or until it doubles in volume.

If you want to prepare the dough for the next day, cover the bowl with foil and leave it in the fridge until the next day. You must not forget to take it out of the fridge an hour before use, to return to room temperature. Knead the dough again and divide the dough into 4 equal parts. From each ball of dough we spread an oval of about 30x10 cm.

Place the dough in the pan, on baking paper and place on each grated cheese, spicy cabanos, finely chopped and halves of cherry tomatoes. We wrap the dough around the filling, so as to give the specific shape of the boat. Then, we break 2 quail eggs in each boat. Preheat the oven to 220C and set the grill function. For gas ovens, heat the oven to the highest stage and place the grill on top.

Bake the eggs for 10-12 minutes or until the dough is browned, the cheese melts and the quail eggs are cooked.
