  1. Preheat the oven to 160 C / Gas 3. Grease a 450g loaf tin and line with baking parchment.
  2. Beat the butter and sugar together until light and fluffy. Add the egg and milk and mix well. Fold in the flour, bicarb and baking powder and mix well to ensure that there are no lumps. Finally add the banana and dates. Spoon into the prepared loaf tin. Smooth the top.
  3. Bake in the preheated oven for 45 to 50 minutes or until a skewer inserted into the centre comes out clean. Remove from the oven, allow to cool then slice and serve.

Really moist cake which I wanted to make as healthy as possible so I did 60 gr plain flour, 50 gr wholemeal and instead of full cream milk I added full cream yoghurt + 1 tbspn milk and a few walnuts, tspn baking powder also a tspn vanilla essence. It actually took approx 1 hour altogether. It was gorgeous. I had it with yoghurt on as my dessert tonight.-28 Feb 2015

This was perfect I followed everything except I used light muscovado sugar instead. I used a mixture of Jordanian medjoul dates, and 'kalmi' dates from Madinah. Absolutely fab.Couldn't get enough of it and it's been on very high demand to bake again! Definitely recommend this recipe.-23 Jul 2016

A lovely light cake which tasted better than expected - not too sweet and the perfect balance of date and banana. I substituted the caster sugar for dark brown muscovado which gave it a moist, slightly sticky texture which was great! So simple to bake - I'll definitely make this again, possibly with the addition of walnuts or sultanas.-28 Feb 2016

  • 3 small bananas (or 2 large)
  • 3 tbsp sesame seeds, toasted
  • 3 tbsp tahini
  • 80 ml (2½ fl oz/⅓ cup) buttermilk (see Note) or nut milk
  • 80 g (2¾ oz/½ cup) chopped pitted dates
  • 125 ml (4 fl oz/½ cup) vegetable oil
  • 2 large eggs, or an extra 80 ml (2½ fl oz/¹⁄³ cup) nut milk
  • 170 g (6 oz/¾ cup) caster (superfine) sugar
  • 260 g (9 oz/1¾ cups) self-raising flour

Ricotta filling

  • 200 g (7 oz) ricotta
  • 1 egg
  • 115 g (4 oz/½ cup) caster (superfine) sugar
  • 1 tsp natural vanilla extract

Icing and toppings

  • 200 g (7 oz) cream cheese, at room temperature
  • 185 g (6½ oz/1½ cups) icing (confectioners’) sugar
  • 1 tsp natural vanilla extract
  • 2 tbsp tahini
  • 2 bananas, each sliced into 3 pieces, diagonally lengthways
  • 20 g (¾ oz) butter
  • 2 tbsp maple syrup (optional)

Cook's notes

Oven temperatures are for conventional if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml 1 tablespoon equals 20 ml 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.

Instructions

  1. Preheat the oven to 180°C (350°F). Line a 22 cm (8¾ inch) round cake tin with baking paper.
  2. Mash the bananas in a large mixing bowl using a fork. Add 2 tablespoons of the sesame seeds, the tahini, buttermilk, dates, vegetable oil and eggs. Whisk the mixture well until combined. Add the sugar, flour, and a pinch of salt and stir well until the dry ingredients are completely incorporated. In a separate bowl, whisk all the ricotta filling ingredients until smooth.
  3. Spoon half the cake batter into the lined cake tin. Use a spoon to create a large, shallow well in the batter, then pour the ricotta mixture into the well. Gently spoon the remaining cake batter over the top, so that it completely covers the ricotta mix.
  4. Bake for 40 minutes, or until a skewer comes out clean. Remove the cake from the tin and allow it to cool completely.
  5. Meanwhile, prepare the icing by beating the cream cheese and icing sugar together until combined - about 1 minute. Add the vanilla and tahini and beat again until thick and smooth. Prepare the banana by heating a large, non-stick frying pan. Add the butter to the pan. Once sizzling hot, add the banana slices. Cook on each side for 1–2 minutes, until brown. Remove from the pan and set aside.
  6. Once the cake is cooled, transfer to a serving plate. Top with the tahini cream cheese icing, spreading the icing to cover the top of the cake. Gently arrange the banana pieces on top in the centre. Sprinkle with the remaining sesame seeds, and drizzle with the maple syrup, if desired.

You can make buttermilk by mixing 80 ml (2½ fl oz/¹⁄³ cup) cow’s milk with 2 teaspoons lemon juice. Allow the mixture to sit for a minute and thicken slightly.

Banana Date Coffee Cake

  • 3 cups all-purpose flour
  • 1 and 1/2 cups dates - chopped
  • 1 and 1/4 cups buttermilk
  • 1/2 cup butter - softened
  • 1/3 cup sugar (see notes below)
  • 3 medium bananas
  • juice from 1 orange
  • 3 large eggs - lightly beaten
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Preheat oven 350 degrees. Prepare a 13x9 baking pan with a generous coating of cooking spray.

In a small bowl, cream butter and sugar with fingers until texture is like coarse sand.

In a large bowl, sift together flour, baking powder and salt.

In a separate bowl, mash the banana. Add butter/sugar and mix by hand until creamy. Add eggs, buttermilk, orange juice and vanilla extract and mix well.

Add wet mixture to dry ingredients. Add chopped dates and mix well.

Pour batter into prepared pan and smooth out evenly with the back of a spoon.

Combine all topping ingredients in a small bowl or cup and sprinkle topping evenly over batter.

Bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.

If you want to add a bit more sweetener without using sugar, I've used both Lo Han Sweetener and Stevia powder. I bought both of these through Swanson Vitamin company on line. I also put in more mashed bananas and used whole Spelt flour. I love the texture and how satisfying it is as a snack. Thanks for the recipe.

Ok. So I made the recipe. I adjusted it to be more similar to the one I made in college. 2 bananas, NO sugar. Heaping 1/2 cups of the topping ingredients. I had to bake it a bit longer, but I have altitude issues. It turned out great.

This recipe is similar to one I used to make in college that I have misplaced. I am wondering if you ever got the sugar/no sugar issue resolved -- my recipe had no sugar at all, but perhaps another banana? Please let me know.

Hi "Cook". Thanks for pointing that out. I'm trying to contact the recipe submitter to see what they have to say. In the meantime, I'm adding 1/3 cup of sugar to the ingredients based on experience with other coffee cakes. The bananas and dates will add plenty of flavor and sweetness, but I think a little sugar boost would help accentuate those flavors.

I've put together this handy little video showing you how to make the perfect gluten and dairy free banana date and walnut cake. Preparation

Banana and Date Loaf

Step 1: Preheat oven to 180°C/160°C Fan/ Gas 4, grease and base line a 2lb loaf tin.

Step 2: Combine the chopped pecan nuts, dates and sugar in a small bowl, set aside.

Step 3: Peel the bananas and mash in a bowl.

Step 4: In a large mixing bowl sift together the flour, baking powder and mixed spice, add the sugar mixture.

Step 5: Melt the butter then lightly beat it together with the yogurt, egg and vanilla extract.

Step 6: Add the yogurt mixture to the dry ingredients, beat well, then add the mashed bananas, carefully fold in, do not over mix.

Step 7: Place the banana bread mixture into the loaf tin, decorate with remaining pecan halves and bake in the oven for 50 – 60 minutes.

Step 8: Once cooked leave in tin for 5 minutes and then remove and place on a cooling rack.

When baking it is better to have very ripe bananas as these have a stronger flavour and make a moister loaf.

This is a plant-based but not whole-foods cake. Why not whole-foods? Well, it's quite tough to make a proper sponge cake without using flour! In this instance we used a self-raising gluten free flour. We also opted to use coconut palm sugar instead of dates to sweeten to keep the sponge a little lighter.
