Hearty breakfast

Cut the bacon into slices and fry it in a little oil. After frying it on both sides, take it out on an absorbent napkin to drain the fat.

We fry eggs in mesh or Romanian (according to preference)


Chilled polenta is cut into different shapes according to imagination. You can also use freshly made polenta, but then we can't shape it.

On the serving plate we arrange the polenta, the fried bacon and the egg and grate the sheep's cheese, in abundance.

Breakfast can be served with any of your favorite sauces. I made a garlic sauce, sour cream and 2 tablespoons yogurt and seasoned with salt and pepper. Sprinkle chopped green parsley on top.

A quick breakfast is prepared in the evening

In terms of the lack of time we face in the morning, there are solutions. Prepare breakfast in the evening to the extent possible. Either you cook something completely that can be eaten cold, or you prepare something partially, and in the morning you just put the pan on the fire.

Ingredients for 8 servings:

  • ½ tablespoon butter
  • 2 tablespoons finely chopped onion
  • 3 slices of bread, chopped into cubes
  • ¼ cup of grated Cheddar cheese
  • 1 beaten egg
  • ¼ teaspoon of salt
  • ¼ teaspoon of granulated garlic
  • ¼ teaspoon ground pepper
  • 8 slices of bacon
  • toothpicks.

Method of preparation:

  1. Melt the butter in a non-stick pan, then sauté the onion for 5 minutes.
  2. Then take a bowl and mix in it the hardened onion with the diced bread, the grated Cheddar cheese, the egg, but also the spices. Then use your hands to shape 8 balls of equal size, which you will wrap in a slice of bacon - use a toothpick to fix the bacon.
  3. Heat a non-stick pan over medium heat and fry the bacon balls for about 15 minutes, making sure you turn them on all sides.

Potato mini pancakes with mesh and crispy bacon

Ingredients for 2 servings:

  • 350 g of peeled potatoes and finely chop
  • 125 ml milk
  • 1 finely chopped green onion
  • 15 g butter
  • 2 tablespoons vegetable oil
  • 4 thin slices of bacon
  • 2 eggs
  • 2 hands of spinach leaves
  • salt and pepper to taste.

Method of preparation:

  1. Put the potato cubes in a pot of water and a tablespoon of salt, to boil. After the potatoes are cooked (it will take about 20 minutes), let them drain in a sieve and then pass them together with the heated milk, but also with the finely chopped green onion. Season with salt and pepper to taste and then shape the puree into 4 mini-pancakes.
  2. Heat 1 tablespoon of oil in a non-stick pan and cook the mashed potato pancakes for 3 minutes on each side, then remove them on two plates - 2 pancakes each.
  3. Take a clean pan, let it heat up well and place the strips of bacon in it this time. Turn them over on the other side after a few minutes, as soon as you notice that they have browned well and become curly on the edges. Cook for a few more minutes on this side and then take them out on the plate, placing them next to the potato pancakes.
  4. Heat the pan again after wiping it with a paper towel, put the remaining tablespoon of oil in it and fry both eggs. Remove the stitches on the plates, but after dividing the amount of spinach leaves between the 2 plates. You will place the eggs on the spinach bed. Serve immediately before cooling.

Tortilla stuffed with eggs and fried bacon

Ingredients for 2 servings:

  • 1 tablespoon sunflower oil
  • 4 eggs at room temperature
  • 4 slices of bacon, pre-fried in a pan
  • 1 tomato cleaned of seeds and finely chopped
  • ¼ cup of grated Cheddar cheese
  • 2 tortillas
  • salt and pepper to taste.

Method of preparation:

  1. Heat the sunflower oil in a pan. Beat the 4 eggs in a bowl with a fork, then put them in the pan and use a spatula to stir continuously.
  2. Place the 2 tortillas on a plate and spread half of the prepared omelet composition on them. Add on top 2 strips of fried bacon, but also half of the chopped tomato on each tortilla. Season with salt and pepper, finish with grated Cheddar cheese and roll tightly.
  3. Heat a grill pan on the fire and place the two rolls filled with egg and bacon in it, pressing well with your palms. After 1-2 minutes, turn to the other side and repeat the operation. Remove the rolls from the pan, place them on a plate again, cut them in half and serve immediately before they cool. Good appetite!
