  • 18 g fresh yeast

  • 25-30 g boiling water (per scale)
  • 100 g mineral water (weighed on the scales)

  • grated peel from a medium lemon

Furthermore:

PREPARATION Fluffy fasting donuts with mineral water
1. After washing with an abrasive sponge and drying in a clean towel, grate the yellow lemon peel (the white pulp is bitter).
2. In a cup / bowl, rub the yeast with the sugar until it liquefies.

3. Boil a little water from which you will take only 25-30 grams (per scale), tell me why.
4. Coca can be prepared with a robot, but I made a small amount by hand. To aerate, sift the flour through a sieve into a bowl. Sprinkle with salt.

6. Pour in the oil, in about 3 tranches and continue kneading until the oil is completely absorbed. It takes about 10 minutes to incorporate. Coca has become smooth but with pores from mineral water:

Grease the bowl with oil under the coca ball, cover with a thick towel and leave the coca to rise in a warm place away from currents.
