The city of New Orleans all but shuts down on Fat Tuesday, as its biggest party culminates in a string of parades and heaps of beads along the streets. Rest assured that fine dining establishments will shutter at least for Tuesday, if not straight through from Sunday to Wednesday. So the hole-in-the-wall joints and bars are best bets for finding the best eats during this raucous holiday — and that’s not a bad thing because delicious bites can be found at some of New Orleans’ cheapest eateries.
At the beginning, take the puff pastry out of the fridge to thaw and reach room temperature. We clean the potatoes, wash them and cut them into thin strips. Put a pan with oil on the right heat. , sprinkle with salt and pepper and leave until the potatoes turn golden.
